There's an earlier thread with loads of suggestions for using up eggs that should help. I'll have a look for it and add this thread to it.

I have a doz eggs, use by date today. Is there anything I can make with them then freeze ?0

Are they in the fridge? No need to use them or bin them if they are......they will last weeks.
To check they are ok before you using them, place them in a deep bowl of water. If they stay on the bottom, they are fine. If they float, discard.Proud to be dealing with my debts :T

If you do want to use them up, you could make French toast and freeze it. It just needs reheating under the grill when you want to eat it. Pancakes are another option.0

Cakes, muffins etc. I expect they'll be fine. I've never heard of eggs poisoning anyone. You will know if they're off when you crack them open.0

If you make sponge cakes then you can freeze them until you want them as they freeze great. I bulk make little fairy cakes (sometimes with raisens and sometimes with choc chips or even plain) and then pop a frozen one in my DD's lunch box in the morning and it's defrosted ready for eating by lunch time.0
