When you do each side, count your stitches before you turn the corner. You should have 4 more than the previous round, because you are increasing 2 at each end of the row. (1st row 3 sts, 2nd row 7 sts, 3rd row 11 sts, 4th row 15 sts etc...)
As Katiehound says, re-use your wool until you are happy with the finished square. Then the sky's the limit!2025 Fashion on the ration

I've been doing as you said and checking my stitches at the end of each row, so far so good.
However, I've been finding that when I do my last row (the one where I increase and ch 3 to go up to the next round) that I have extra stitches on that round for some reason? I think this is where you're seeing the join?
The tutorial tells me to pick up the stitches across the row until I get to the top of the ch3 and slip stitch the round together, but that gives me extra stitches? If I don't pick those stitches up, it looks as though there's a big hole?

That video would confuse me as they are trebles in UK terms not doubles!
However I don't know where the problem lies because she tells you exactly how many stitches you have and it shows clearly where to join.
I have 2 suggestions.
Are your 3 chain to stand as the 1st stitch in each row too slack? That could affect the outcome.
Are you maybe crotcheting into the base of the 3rd chain as well as joining at the top of it?

I've had a look at the videos and I think you are making an extra stitch in the bottom of the 3 chains at the beginning of the round. I also think on some rows you have missed the first stitch after the turn at the corner. Have another good look at the video and see exactly where she makes the first stitch after the corner. When you crochet into the top of the stitch, think of it as the 2 strands lying on the top is where you insert your hook, and it's slightly to the left on the top. I think you've missed one or two on the corners, but made extra at the join.
Like Katiehound, I wish I could sit alongside and show you! Is there a knit and natter group near you, or a wool shop that could show you? I'll keep trying to help.2025 Fashion on the ration

3 double crocher (american terms)
ch2
3 dc
ch2
3 dc
ch 2
2 dc
slip stitch into 3rd chain on the ch5
round one complete
chain 5
in the same 2ch space from bellow, 3 dc
ch 1
{3dc, ch2, 3dc, ch1} first corner done
{3dc, ch2, 3dc, ch1} second corner done
{3dc, ch2, 3dc, ch1} third corner done
last corner
3dc, ch2, 2dc, slip stitch to 3rd chain of ch 5.
(the 2 dc you do here are going to slightly overlap the chain 5 at the bottom).
Round 2 complete
repeat until desired size.
Rules are: always do a ch1 space to space your 'gaps' out between your clusters of 3dc and always do ch2 in the corner.

I also couldnt 'get' granny squares. he does it similar to me, although he chains 3 then 2dc completes his round then joins via the ch2 of a corner.

Sorry I haven't been around for a couple of weeks, but it looks like you might just have cracked it all by yourself! This one looks perfect :T:T:T:T:T:T:T:T:T WELL DONE!
If you pin it upside down on an old seat pad or towel and hold a steam iron above it to do a burst of steam, it will hold its shape when you take the pins out after a few minutes. Don't touch with the iron though!
What are you going to do with it? Are you making a blanket to start off? You could make another one, sew together and use in the kitchen as a pot holder. I did this when I was learning how to do circles, and I still use my stripey green and white bit of loveliness!!!!
