  • I adore Creme Fraiche, its so versatile can be used in sweet or savoury dishes, I use it for loads of things.

    Asides the ideas mentioned here which I can fully endorse, here are a few more suggestions -

    In place of mayo for sandwich fillings etc.

    Add to homemade salad dressings

    Very quick cheese sauce - empty tub of creme fraiche into pan over medium heat, add a pile of grated cheese and stir until melted.

    Dips or fillings for a baked potato/ sweet potato (my fav!) - mix creme fraiche it with any of the following chives, garlic granules, paprika, chilli & coriander with a dash of lime juice, parmesan.

    Heat pan add bag of spinach and replace lid til sweated off, add a tub of creme fraiche, season with salt and pepper. This can be used as a side veg dish or to make Florantine. Place fresh fish (I have used salmon/haddock/cod) in a casserole dish, pour over spinach mixture and add a grating of cheese, then bake in the oven for 20 mins.

    Paprika Prawns - Chop and lightly saute a red pepper, add tub of creme fraich and 2 teaspoons of paprika, when it starts simmering add frozen prawns which should only take 2 minutes to heat through as they are already cooked. Season to taste - add some chilli if you like it a bit spicier - serve with rice.

    Edited to add --we can forget the pasta/pesto/creme fraiche bit. He says it was DISGUSTING. :))I can see a few problems ahead with this healthy eating regime... Sigh.

    I use creme fraiche to make dauphinoise potatoes. Heat it gently with a chicken stock cube and some crushed garlic and then pour over layered sliced (cooked) potatoes and cheese. It's delicious and using half fat creme fraiche (rather than cream) eases my calorie conscience a little!
  • I bought a large tub of creme fraiche in the Whoops! section of Asda, used a bit to make a creamy chicken sauce, but need some ideas for the rest.

    Some fab ideas to use up the rest of my tub.

    Last night I fried some onions, added chicken, capers, wine vinegar, crushed garlic and creme fraiche and cooked it all up.

    I have some creme fraiche left after making a cheese sauce. Any ideas what I could do with it? Can I use it in cake baking?

    I've used creme fraiche in cakes before, often when the shop hasn't sold soured cream and it seems to work fine :)
  • In a not very menu planning way, I saw creme fraiche half price in Sainsburys and bought a tub. It is the low fat one. The question now is, what shall I make with it. Could be sweet or savoury. So if any of you have a favourite recipie please let me know. Only 4 more days to use it. Thanks
