I have a bottle of prosecco in the cupboard thats been lurking there since we got married five years ago...
It was a gift and not something I buy so I dont know-
does it have shelf life of a year or two , or will it be ok?

A friend very kindly gave me a HUGE bag of courgettes yesterday, the problem is i'm off on my jollys next week and as the only person in the house who likes them i can't possibly consume them all before i go. Does anyone know if i cut them into cubes and freeze will they be ok? Am concerned they may be really watery when i defrost and use to cook with? I would make a huge vet of bolognese or something similar with them in and freeze but due to a mammoth baking session last weekend my freezer is full to bursting
Any and all suggestions welcome!

I think they'll freeze of but will be a bit watery and mushy when deforsted. You can pickle courgettes too.Currently studying for a Diploma - wish me luck

I have tried to freeze them as slices in the past (to use on pizzas in winter), but it wasn't great. I do make a nice indonesian-style pickle with them every year, though. This year, I was going to try to freeze a few bags of grated courgette. After defrosting, I could squeeze the liquid out really thoroughly and then use in certain recipes calling for grated courgette - and probably add to bolognese as well. Been freezing my crops of courgettes all season so long and no probs so far. Don't have time to batch cook with at mo as work v busy, ditto home life. I pick, slice, put into hot water, gentle boil for about 3 mins, plunge into cold water, drain VERY well, open tray (in my case Tupperware lids!) freeze and then decant into bags/boxes. I've been grabbing handfuls and throwing into pastas, chillies, curries. obviously not as firm as fresh but not bad and not that watery either. I wouldn't bother with grating, that would turn to watery mush IMHO.:)0

I froze grated courgette last year and it worked fine. However, I removed a lot of the water from them first (grated, sprinkled with salt and left to drain over a sieve for a couple of hours, rinsed off salt and squeezed out as much liquid as possible before freezing in multiple small portions).
Defrosted they are never going to retain that just picked crispness, but they certainly still looked like grated courgette and have been fine to add to bolognaise, stews, carrot cake, potato cakes etc without being too mushy.
I wouldn't worry too much about missing out on fresh courgettes. If you're only away for a week or two I imagine your friend will be happy to donate another HUGE bag of courgettes on your return.0 -

One large onion
3 courgettes
1 potato
veg stock
basil
Fry the chopped veg in a little olive oil for 2-3 mins, add stock and basil, simmer for 40 mins. Blend. Eat. (Add a little milk for cream of courgette soup)
