I only ever blanch veg for a minute or two. I figure I can guess cooking times from there!

I have found at the back of my cupboard a bottle of Port that has been opened and a small amount drunk.
I can't remember even having it so it must be 3-4 years old I would think. Is it likely to be OK still? I was quite excited to discover it and hope it's not wasted.

Alcohol is a preservative so it will be fine, as long as it smells OK it'll be fine to drink. Wahooo!! 3 or 4 years is nothing really, my grandma only drank alcohol at christmas - a glass of sherry - and she'd get through one bottle about every decade...

Poncy port aficionados might claim something has happened to the taste, but yes you'll be fine with it. I am sure I have happily enjoyed drinking alcoholic beverages my parents had first opened before I was born!

I'm not sure if this best posted in green fingered or here...

I'm growing A LOT of fruit and veg this year and am hoping to pickle, preserve and freeze a lot to see us through the winter.

With peas - and other veg, do I need to cook them first before freezing?
I haven't a clue and the majority of the books that I've read don't seem to spell it out - - and I really don't want to lose my hardwork!!

    Any tips gratefully received!
Cabot (0%) left to pay £2455 let the overpayments commence! :D

When we were young, we hated the day that my mum was freezing peas, as we couldn't pod them as quickly as she was weighing them!

Anyway, she used to weigh portions sufficient for a family of 5, blanch them and then rapidly cool with running cold water.

    Hope that helps
