Absolutely, totally safe to drink. We have some wine stored that we have had for years! I certainly wouldn't consider tipping or cooking with it! Let us know when the party starts and we will be there!0

Drink and enjoy...just leave a decent gap between bottles.
I know this is nothing new but it really does pay dividends to allow your wine to breathe a little after opening.
I used to think this was wine snob pish and tosh but last year i acquired a battery powered air pump specifically for aerating wine before consumption and it certainly improves the enjoyment of wine.

Being reds, they should all be OK.
I'd try the undated Corbieres first. Corbieres is made from a specified blend of varietal grapes. As it's undated, your bottle is probably made with some grape juice from the previous year and some from the current year, instead of all from the same year.

The 2007 Pinotage shouldn't get much better than it is now.
