    good afternoon everyone :D
    am feeling a bit like a big fat whale today :rolleyes: it seems to be the same every monday recently, i seem to make up for it by friday/saturdays weigh day but its not really consistant enough is it?

    yesterday was particularly bad as we spent most of the day broken down in motorway services :mad::mad::mad::mad: we ended up with mcdonalds, cookies and loads of junk :o i did manage to do a yummy roast dinner last night which would have been fine if it weren't for the tonne of cheese and oatcakes i had afterwards :o:o

    oh well, onwards and upwards as they say :D

    today is:
    small bowl sugar free muesli
    left over bacon and onion stuffing and hm low fat cheesey colslaw, 1/2 a choc chip cookie
    something from the soon to be rubberised chicken :rotfl:prob with salad

    does anyone have any 'light' ideas for rubber chicken? dont really fancy stew and such like when the weather is nice

    Coronation chicken?

    Don't know exactly how to make it but I am going to attempt a low-fat veggie version tomorrow with ww 1/2 fat creme fraiche, lo-fat natural yoghurt, bit of balti curry paste and quorn chicken pieces. Possibly add a bit of lemon juice/soy sauce/cumin/tumeric etc to taste. Maybe some spring onions will find their way in too. Will serve with a small baked potato and salad.

    Right I am going to be getting on with this again. Unfortunately not a good start forgot to have breakfast, I know, I know, will remember tomorrow. I get the shakes if I eat too many carbs during the day, so I eat high protein and high fibre during the day ( for some reason I am fine in the evening, I think I am pre diabetic, so even more reason to get on with this, I also need surgery soon and would like to be lighter for that)

    L left over Roast chicken no skin, apple, grapes

    D HM chicken soup, Quorn chinese curry and rice. side salad

    S (breakfast) 2 ryvita and philly.+ banana

    Wow, some great weight losses recently, well done! :T:T

    Keep at it those who are struggling, it does come off eventually. Just try a little less food or a little more exercise (or both!) and you will start to see the pounds melt away!! It is easy to get disheartened and jump off the wagon for a while, but then it is all the harder to get back on...believe me I know!!! :rolleyes:

    Vixtress, I usually make curries as DS2 doesn't like stews or casseroles(!).

    Last week I made a good very low fat curry, based on a recipe from Sue Kreitzman's "The Complete Slim Cuisine". I have to avoid as much fat as possible as I have suffered from pancreatitis and gastric colic recently.

    Low Fat Chicken Curry

    6 skinless chicken breasts - I used chicken left-overs, see below
    juice of one lemon
    1 tsp each of: ground turmeric; groung cumin; ground coriander - I used Tikka Powder, see below
    1/2 tsp each of: caster sugar; ground chillies; ground cinnamon
    1/2 bay leaf, finely crumbled
    2 cloves garlic, minced
    2 med onions, cut into eighths
    10 fl oz/ 300 ml stock
    4 fl oz/ 120ml stock
    2 tbsp tomato paste
    1 oz/ 30g raisins
    3 tbsp plain low fat yoghurt, at room temp - I used stabilised HM yog, see below

    1 Cut the chicken breast crosswise into strips 1"/2.5 cm wide. Put in bowl and add lemon juice and some salt. Toss to combine and set aside

    2 Place all the spices, herbs and garlic into bowl

    3 Separate the segments of the onions and spread in a heavy non-stick frying pan. Add no liquid or fat, heat gently. Cook on a moderate heat for 7-10 minutes until the onions are sizzling, speckled with dark amber, and beginning to stick to the pan.

    4 Stir in 10 fl oz/300 ml stock and let it bubble up., stirring up the browned deposits in the pan with a wooden spatula. Stir in the spices, herbs and garlic. Turn the heat down a bit and simmer, stirring frequently until the mixture is very thick (not at all soupy). with the onions and spices "frying" in their own juices. Don't rush this step, as it is essential that the spices should not have a harsh taste. Taste, and cook very gently for a few more minutes if necessary.

    5 Toss the chicken into the spicy onions, turning the chicken over a low heat for 1 minute until everything is well combined. Stir in the 4 fl oz/120 mn of stock as well as the raisins and tomato paste. Spread the mixture evenly in the pan, cover and cook over lowest heat for 4 minutes more.

    6 Uncover and add 2 tbsp yoghurt, stirring over low heat for a few moments until everything is amalgamated, then add the last tbsp of yog., stirring for a moment or two more. Check that the chicken is just cooked (firm and springy, not soft and mushy) before serving warm. As I used cooked chicken,you only have to just warm the chicken through
    . Using stabilised yog means you don't have to be so careful about the yoghurt curdling.

    In my version I used chicken left-overs and used Julian Graves's Tikka Powder as I didn't have most of the spices, or lemon juice...and it worked well.

    I stabilised my home-made yogurt (made with skimmed milk and 2 tsp of 0% fat yog) beforehand by mixing yoghurt with some corn flour and stirring to avoid curdling while simmering for 5 mins...it will keep in the fridge for a few weeks.


    Zippychick - I use some stock rather than fat to mix the chips in before roasting, they can take longer to cook, but are fat free! To make sure they don't stick, I use a non-stick covering on my baking sheets, either baking parchment or silicon sheet, and turn them at least once during the cooking.


    Food for today:

    B: Cornflakes, red milk and small amount of sugar
    L: Wholemeal pitta bread with some salad and cold chicken left-overs.
    D: Baked pot, BBQed thin beef steak & veg. have drained HM yog on pot instead of any fat

    S: banana, HM fruit loaf (fat free!); SF jelly

    Did a load of baking this afternoon, no picking for me as full of fat! At least my family won't be wandering about asking what there is to eat, and eating all my fruit loaf!


    Off now to get BBQ on for tea!

    Hi all, not been on in a day or two.

    Yesterday
    B One round HM toast and poached egg
    L - Lots of cider:o
    D - One barbequeed burger with little cheese
    When i came home half cut - one round of bread with corrie chicken

    Today

    B Smoothie made with mango , strawb, yog, milk, oats
    L HM pasta sauce with pasta and shaving of cheese
    S one cream cracker with corrie chicken (didnt eat the two i made with cheese as well:p) 25g pack of crisps
    D No plan as such, crikey, I have just seen the time. I came home sick from work today and am all out of sorts .
    Edit - i had half a tin of beans, 2 rounds HM brown toast and shaving of cheese. A pear.

    E - Cycle to work, walked home as i just couldnt hack cycling. Had planned to do more exercise this week but the old aches and pains are playing up, and i can't over exert myself so just have to play it by ear

    I have noticed I am definitely more in control of what I am eating, I will see what the scales say on friday though :cool: Im not terribly confident as i don't feel like i'm dieting

    Well done kjmtidea! :D

    Been riding about on for 6 miles on my bike today, feeling quite good :) Food has been:

    Breakfast - Muesli
    Lunch - Leftover tofu and vegetables from last night (feel like i'm eating too much tofu these days!)
    Snack - Orange and cranberry smoothie
    Dinner - Baked sweet potato and a small salad

    Ironing calls now :( See you all tomorrow

    D....carbonara left from yesterday, turnip, scoop ice cream, tea;

    Well today I totally lost the plot.
    B. Left over beans/spaghetti on one piece of buttered toast.
    L. Noodles, peas, sweetcorn and tuna.
    S. Slice of homemade chocolate concrete. Picked at my daughters screwball.
    D. Cheese and tomato sandwich, picked at cheesey wotsits. Quarter of ham sandwich.
    S. Dark chocolate flake and another slice of chocolate concrete.

    Exercise: Half a mile running and 5 miles walking (but most of that was with my preschooler - so not at a fast pace).

    My family are resenting the time I've been spending exercising. So I've been finding it hard to do cardiovascular workouts. I'm hoping that I either stay the same weight or not put on more than 2 lb.

    OK been avoiding you all for a couple of days as things just went out of control a bit!

    Back on track again (for now) and pleased to report that weigh in today showed I have lost the weight I put on last week and another 1lb with it making a total loss of 63lbs which is 4.5stone and I'm a happy bunny!!! :)

    Today
    B/L~ ham, tomato and small amount of grated cheese sandwich
    D~ (1st break at 4.30pm) small amount of left over low fat chicken korma with pitta. Apple
    S~ (2nd break at 9.30pm) pitta filled with salad, tomato and ham. Splendip thingy I found in fridge at work and a WW choc biscuit.

    Now that looks like loads but I'm starving today!!!
    Will have to go to bed now and avoid food!

    Did well on the eating front yesterday, but found it difficult. Low fat coronation chicken didn't turn out exactly as I would like really, might try and palm it off onto OH today. :D Plan for today:

    Breakfast: hot water and lemon, banana, omelette (300)

    Lunch: small baked potato, tuna and sweetcorn mayo, salad (500)

    Dinner: 2 cauldron sausages, root veg mash, carrots and peas, gravy (500)

    snacks: melon and grapes, sugar free chuppa cupp
