Hi Zippy,
Scouse is a traditional Liverpudlian stew that originates from Nordic countries as 'Lapskaus' or 'Labskaus' which is from the North of Germany. Its similar to Irish stew and is traditionally made with the cheaper cuts of meat like neck end of lamb but it can be made with beef.
A good traditional scouse should only contain a tiny bit of meat, potatoes, onions and carrots as these were the cheapest ingredients available, It is also much better the day after cooking as alot of the potatoes break down and make it really thick.
Best eaten with pickled red cabbage, bettroot and a crusty roll (cob)
Some people make it with mince or add gravy granules to it which is just sacrilege as it doesn't taste right at all.
This recipe is very similar to the one my Mum and Nanna make but they cook it on the stove top rather than in the oven but it looks identical http://traineedomesticgoddess.blogspot.com/2009/01/alright-mate-av-some-scouse.html
The term is 'well rotted'0 -
Sounds very like irish stew indeed! Thanks for clarifying it - I have read it mentioned a few times here and often wondered! Regards the bisto etc, I am guilty of adding this to irish stew - I eat it with brown sauce, so find it very bland otherwise to be honest.A little nonsense now and then is relished by the wisest men

Yep, brown sauce is another perfectly acceptable accompaniment to scouse, I even have a bottle of it in my desk drawer at work for such occasions
I think it needs something vinegary/tangy to really bring the flavour out, hence the red cabbage and beets. Without it just tastes like corned beef hash0 -
Also similar to Lancashire hotpot. Due to the location it is probably a melting pot!! idea. However as L'pool is a port probably also has influences from other nations too as Floyd said. Never seen it made with Beef, but have heard it before, but as we don't eat Lamb anymore don't have Scouse ( Patch the Liverpudlian originally, too!- what district are you Floyd?) I love Corned beef hash, but it has to be all mashed together, not lumps of corned beef and chunks of potato.0

We are in Garston now but my family are originally from Kirkdale/Anfield and OH's from Speke/Netherley but I was born in Newport, South Wales so I have a really strange accent!
OH makes scouse with beef and its lovely, I actually prefer it that way but then I have never been a big fan of lamb0 -

I have never even tasted corn beef hash! I made my own version by readin the thread here - a few weeks ago. But im pretty sure it wasnt typical, I just sort of combined everyones answers together! My stew is heating now, looking forward to it.
Must say I am really surprised at how that smoothie has filled me. It was great! Been doing P Mck 2 days, listeend twice today and yesterday, and it probably sounds ridiculous but food tastes better. I bought a like 10p mix up (about 25p) from the shop and instead of eating it all within two minutes, i had a cola bottle and savoured it , and did the same with a MOjo chew. Mmmmmmmm. And put the rest in the cupboard! :eek:A little nonsense now and then is relished by the wisest men
