    Ingredients
    2 Medium Onions, peeled & chopped
    2 Garlic cloves, peeled & crushed
    225g/8oz Red Lentils
    600ml/20 fl oz vegetable stock
    1 tbsp tomato puree
    1 bayleaf
    1 teasp dried thyme
    1 teasp fresh ginger, grated
    1 teasp Garam Masala
    1/2 teasp paprika
    1/2 teasp turmeric
    700g/1 1/2lbs leeks, cleaned & chopped into approx 2.5cm/1" pieces
    225g/8oz button mushrooms, sliced
    Procedure
    1) Pre-heat oven to 200C/400F/Gas Mark 6
    2) Sweat the onion and garlic in a saucepan with a little water until start to soften.
    3) Add the lentils, vegetable stock, tomato puree, bayleaf, thyme, grated ginger, garam masala, paprika and turmeric. Bring to the boil gently and simmer until all the stock is absorbed and the lentils are soft - stir occasionally to prevent sticking to pan.
    4) Remove bayleaf and process the whole mixture in a food processor until smooth ( I don't always do this).
    5) Steam the leeks for approx 3-5 minutes until just soft. Can boil instead for a few minutes.
    6) Place the sliced mushrooms and leeks in a shallow ovenproof dish, pour the smooth lentil mix over the top and smooth evenly.
    7) Bake in the pre-heated oven for 20 minutes until the topping is just beginning to go brown. Serve hot.


    It is really filling and makes a meal on its own, but is equally nice served with pasta or a Jacket potato.
    It can be frozen for up to 3 months.
    The topping could be used over any sort/selection of cooked vegetables

    Good afternoon everyone, well, I just found this thread as I was munching my way through a heap of salad, I am 55 and have decided to face the fact I have 65 lbs to lose (eeeek!) - I have started going to the gym as often as I can, at least 3 times a week, and have been eating for weight loss for a week now (I always eat healthy/ home-made food, just too much of it!!!!).

    Today's food plan:

    Porridge (skim milk and water, sweetener)

    Apple mid-morning

    Virtually fat-free cottage cheese with BIG mixed salad
    2 ryvita
    Low-fat yogurt

    Orange mid-afternoon

    Wholemeal pasta squiggles with home-made bol sauce, made with lean beef and lots of veggies.

    If I get the nibblies in the evening I will have a couple of kiwi fruit.

    I know this is going to be a slow process, I hope to speed it up by being as active as I can outside my (sedentary) office job, gym, gardening, walking, swimming.

    The deciding factor in this was for the first time ever being absolutely sure that I was turned down for a job because I was too old. Now I can't change my birth certificate, but I certainly CAN change my weight and appearance, fat is so ageing.............maybe looking better (and hopefully in the process a little younger) will help in my job hunt.

    Then when I get a job I can afford plastic surgery to tidy up all the saggy bits left from when I lose all this weight!!!!!

    Thanks everyone for all the nice words. No big celebration planned, although I did treat myself to a temporary wedding ring as mine (size t) was too big. New one is a size N :D

    Morning all!

    Back of to work later till 10pm tonight so am taking my food with me, even though its provided free at work I'm never sure whats on offer till I get there.

    B - boiled egg, toast and 1 weetabix

    L - steamed salmon fillet with chargrilled veggies(frozen from Tesco and very yummy)

    D - am cheating here M & S veggie mousakka(bought 3 when they were on offer) not sure what I'll be having with it, veggies or salad probably.

    snacks - banana, grapes , mullerlite with choccy sprinkles.

    Well sts again for me. HO HUM.

    Be having a really weird time of things, isn't life strange?

    Bfast kiwi and nat yog. Might have cereal as well, didn't have any diner yesterday and am feeling extra hungry.

    Lunch not a lot

    Diner not decided. Will include bulger salad.

    morning!

    another beautiful day, hurrah!

    went slightly off the rails last night with cheesy pasta and garlic bread, but i provided the pudding so we had fruit salad and yoghurt instead of the usual sticky toffee pudding and chocolate brownie!

    i also went back to my kung fu class for the first time in about 3 months and really enjoyed it, so i'm looking forward to getting back into that.

    today:
    b - orange, apple, cornflakes and yoghurt
    l - tuna and quinoa salad (got home late last night to a note from my flatmate saying she'd made me lunch, lovely surprise!)
    s - fruit, some dry oat cereal, maybe an oatcake or cracker before pump tonight
    t - TBC!

    Good morning everyone, another lovely sunny day!
    Eating was fine yesterday which pleases me as I tend to be a little more relaxed following weigh in.:p

    Today I am having

    B - bacon, egg and tomato
    s - satusuma and apple
    L - baked potato with baked beans
    s - coffee and piece of scan bran cake
    D - roast loin of pork, assorted veg and mashed potato

    I now have a huge great mirror leaning against my sideboard and have no idea how I am going to get it hung on the wall :eek:- why do I never think these things though?:o:rotfl:
    When life hands you lemons, ask for tequilla and salt and give me a call!!!

    Beautiful day here but I'm stuck inside waiting for my boyfriends new big giant TV to be delivered, sigh. Thought I might go for a nice long walk but who knows, maybe it'll get delivered soon and I can go out after. Deciding whether to star some aerobics in here, in case the delivery comes and i'm a big sweaty mess :o

    Breakfast - Scrambled Egg
    Lunch - Leftover mushroom pasta from last night
    Dinner - A pizza bake with butterbeans
    Snacks - Not sure exactly but no doubt lots of fruit

    Not the best day today, but meh, feeling lazy ;)

    Hi Everyone,
    Can I join in - just had the latest "lightbulb" moment and need some encouragement. Am off to rejoin SW tonight - been telling myself for weeks that I MUST, and today is the day. Long journey ahead, but Rome wasn't build in a day and I mustn't expect too much, too soon.
