  • Morning all,

    Battling through the week, had a quick tea last night witht the best of intentions to make some HM peppermint creams for presents. Got all organised then found i had forgotten to get icing sugar...doh!
    Anyway will pick up at lunchtime when out of office. Don't need much for lunch today as going out for a chinese with work peeps. Boss pays for it so will have plenty Crispy Duck:j
    Chilly here today with some chat about snow on the hills later - Brrrr! Hope everyone is well today, not long until the weekend:beer:

    p.s i have asked for a Slow Cooker for my Xmas. I am 25. Am I old before my time?:rotfl:

    Morning all!

    Cold here again, not much of a surprise being as though it's November I guess lol!

    Cleaned and hoovered and swished and swiped with a vengeance this morning! Need to put some bread on when the pizza dough has finished, making more bases for the freezer, wm and dw doing their things, and hopefully the yoghurt is doing whatever it does, more soft cheese requests from dd1 so need extra yoghurt!

    Dinner will be either spag bol or lasagne, depending on how much time I have, which reminds me I need to get the mince in the sc! Got a friend round for the day so will hopefully catch up later, but best go sort out dinner for now. Hugs to those in need and have a good day, and keep warm xx

    day off today :j i have tons to do but feel shattered, i fell asleep on the sofa when i got in from w*rk last night and MrS had already gone to bed so i didn`t get all the little jobs done that i normally do when i come in so i have spent ages catching up this morning.

    I have advertised my dads breadmaker for sale as he has bought one that makes a bigger loaf and a lady should be coming for it today and i need to pick up a small fan heater from Argos that i reserved yesterday and shortly i shall be out walking the dogs.

    My printer won`t print at all and i`m really fed up with it - it`s not been used a great deal even though i have had it around 5 years but i wanted to make my Christmas cards, i`ve run the cleaning cycle around 30 times and it`s not made any difference at all, i don`t really have the money to spare for another one unless i get an early Christmas pressie from DH ( he has suggested this) but that seems like a waste to me.

    Tonights meal will be enchiladas - i don`t make them individually but make them layered in a dish like a lasagne and they are a big favourite of ours so i`m looking forward to them, i hate making the tortilla wraps as i end up like one of the homepride flour men but the end result is worth it :D

    Mioliere - Hope that you get back from the hospital quickly and can get something to eat and drink, not even a cuppa sounds awful, i`d probably take a sandwich and flask with me :rotfl:

    Tru - I`m so glad that your rabbit is ok, it must have been heatbreaking to think that you may have lost her.

    Catznine - Penny may be eating grass to try and get rid of bile in her tummy, when she brings it up it will stain anything that it comes into contact with it very badly so good luck! Afterwards she will be fine. Sorry everyone if tmi :o

    Betheebee - Good luck with your op, i`ll be thinking of you today.

    Well its grey and chilly here today, so I'm trying to put off going out. I've got a lamb casserole to prepare for tonight's dinner. I love lamb, it's my absolute favourite, pity it's the most expensive of the meats. Then I must restock the biscuit tins, not for me you understand, for visitors:whistle: I suppose a run round with the vacuum cleaner wouldn't go amiss either. See, I shouldn't have to venture out until this afternoon at this rate:D

    Glad the bag worked out first time Aussie, must be really easy and foolproof then:p :rotfl: Might give it a go myself. I've got some navy canvass type material that should make a good strong bag.

    Hockyduo - slow cookers rock!

    Well, I am feeling calm about tea as yesterday I cooked a piece of brisket in the slow cooker with lots of stock and dried veg. Last night we had the liquor as soup (which dear heart thought was fantastic and little bear kept demanding more) and at least the same again of liquor to freeze for another meal. Also tonight we have brisket cold with home made wedges and tomorrow probably shepherd's pie well padded out

    The washing machine is on as I have just found a lot of dear heart's dirty washing - hidden!

    Not feeling quite so zingy today and where I had shingles is very, very painful. I am blaming the weather. Dear heart is full of achey cold and little bear is still very snuffly with a new development - a cough. So the vaporiser is on and I am not taking him to playgroup tomorrow.

    As I feel absolutely dreadful there is no excuse for continuing to avoid the ironing - so that is me sorted for the day :rolleyes:

    The soup that little bear spilled all over my chair came off very well with stardrops. Thank goodness for stardrops!

    Kaat - Quesadilllas


    1tbsp oil
    2 garlic cloves (chopped finely or crushed)
    one large onion (chopped)
    1 red pepper & 1 yellow pepper (chopped)
    375g mince
    100g chorizo sausage or salami roughly chopped
    1 red chilli
    sploosh of worcestershire sauce
    Salt and pepper
    tsp dried mixed herbs or a handful of parsley
    8 prepared flour tortillas
    4tbsp prepared tomato salsa or chutney or ketchup
    150g Cheddar cheese (grated)
    Extra oil, for frying

    • Heat a small amount of oil in the frying pan and cook the garlic, chilli, onion and peppers for 1-2 minutes
      Remove from pan and keep warm.
    • Add the beef mince and chorizo sausage or salami to the pan and cook for 5 mins. Drain off the fat and then add the pepper mix back in and cook it all for another 5 mins. Season with salt and pepper if required. Stir through the herbs. The mixture should be on the dry-ish side.
    • Place 4 tortillas on the chopping board and spread evenly with the tomato salsa or chutney.
    • Wipe the pan out with kitchen paper and add a drizzle of oil. Once warm, place one of the tortillas in the pan, chutney side up. Add a quarter of the mince mixture and sprinkle with a quarter of the cheese and place a plain tortilla on the top and press down.
    • Fry the tortillas for 2-3 minutes. Invert the tortilla onto a plate, then return to the frying pan, cooked side up. Continue to cook for a further 2-3 minutes until the cheese melts.
    We then popped it into a warmish oven while we cooked the other three in the same way, adding extra oil to the pan as required. We have also added sliced tomatoes to the 'sandwich' when we have them in the fridge.

    Moanymoany - the best way to use pearl barley is as follows - decant from slow cooker, place into suitable bowl, take outside and pebble dash walls of house... :rotfl: Sorry hon, can't be of any help there, I can't stand pearl barley in any form..:rotfl:


    Thank you everyone for the hugs for Tristan - I am having a whole nights sleep tonight I hope as Tris has a hospital appt at 3pm his time (10pm our time) so probably won't feel up to being online when he eventually gets back.

    Dinner was delicious last night and we are planning to have them again soon. tonight we have a tescos order due so will prob decide what to cook when it is here!

    Finally lit the fire last night and it looked so lovely. Nothing like a real flame to warm the toesies.

    Cold here to-day but no frost so thankful for small mercies.

    Easy dinner to-day.....Spaghetti bolognese with frozen sauce, which I have remembered to take out of freezer...there is also some soup which I made with leftover veg, few lentils and some semi-dried tomatoes...whatever about anyone else, I need soup on cold days!

    DD4 not feeling well to-day so has reluctantly stayed off college, she is making some porridge now, so I will have some with honey and milk, only had some dried fruit earlier.

    Sending off five Christmas cards/ letters to-day as most years I find myself doing it the week before Christmas, so doing it by degrees over next couple of weeks.

    Still dithering over whether to buy halogen oven or not...would be about half the price of a Remoska and I think would be ideal for when there is only the normal household complement here, or for when I just want to do one thing...opionions welcome...think that after Christmas I am going to survey finances and get a small stove for living room....can use top as a slow cooker...might try and save for it from GC, if I ever get to stay within budget again! There are so many things I want to do here but refuse to borrow so its going to take a while.

    Stefjb....sorry to hear about DD's miscarriage...had one and it was so much more traumatic than I expected...hugs to you both.

    Beth...you are probably still sedated but just want you to know that you are in my thoughts and prayers.
