Use a strong cheddar or something similar instead. I'd probably grate it though to help it melt in easier.0

Can anyone point me in the direction of the recipe for this, please.
I have searched but my brain isn't up to full capacity today so I can't find it
I've made it before following a recipe here and DD wants it with her dinner, but I can't remember how I made it, although I know it has cream in it

There are some mash suggestions in this cauliflower thread. I can't imagine the process you follow matters all that much though: just cook it until soft enough to mash, mash it, then add in whatever else (if anything) you feel like.0
