    Use a strong cheddar or something similar instead. I'd probably grate it though to help it melt in easier.

    Doesn`t have to be blue stilton, you can use the white type, just as tasty.

    My mum regularly makes cauli cheese soup and she uses strong Orkney cheddar. It is lovely, a little mustard would be good in it too.

    cauliflower soup with horseradish sauce stirred into it towards the end. Yum x

    Yep wensleydale would probably be fine as well.

    Also found this quote from Wiki about Stilton cheese -

    or freeze it now then when you want it make a cheese sauce put cauli on plate pour over sauce then grill till bubbling

    Can anyone point me in the direction of the recipe for this, please.

    I have searched but my brain isn't up to full capacity today so I can't find it :o

    I've made it before following a recipe here and DD wants it with her dinner, but I can't remember how I made it, although I know it has cream in it :o

    The cauliflour is cooking now, so any help would really be appreciated :)

    There are some mash suggestions in this cauliflower thread. I can't imagine the process you follow matters all that much though: just cook it until soft enough to mash, mash it, then add in whatever else (if anything) you feel like.
