    Grate it (very messy but worth it) and cook gently in a frying pan with butter (and spices like cumin and coriander if you like) and use in place of rice.

    Completely genius :D

    Or, mash (as the suggestion above) and add snipped up spring onions, soured cream and lots of grated cheese. Bake in the oven until golden and bubbling. Low carb cheese pie :D


    Or broccoli and cauliflower soup (just had it for dinner). Saute a leek or 2 until soft, add broccoli and cauliflower florets, simmer with some veggie stock and lots of black pepper until the veg is soft. Blend and add a couple of handfuls of grated cheese. Divine :drool:

    So many brilliant ideas! I knew people on here would come up trumps. The cauli is so big I can probably use it for more than one of these recipes.

    Some ideas:

    Cauliflower bake - Cauliflower covered in cheese sauce and topped with breadcrumbs and cheese and baked - I produce a few of these and freeze in 2 person portions for me and OH. I use as a side dish.
    Veg Pakoras - Cauliflower chopped finely and added to grated carrot, a few frozen peas and finely shredded onion/leeks. Mix a few spoonfuls of self-raising flour (or gram flour if you have it), half teaspoon of cumin and coriander and quarter teaspoon chilli, add water and pinch of salt to make a batter and then add the veg. Mix well and place a spoonful into hot fat and shallow fry until golden brown. Serve with mango chutney.

  • I have a couple of cauliflowers that are looking a bit sorry for themselfs, only cost me 40p each!
    Do you have any meal ideas other than cauliflower cheese?:p

    I had one cauli in my fridge already. But OH came home tonight with another two HUGE caulis :eek:

    He works in a food place, and in the canteen area were two big baskets filled with caulis, with a sign saying 'staff - help yourselves', as they're looking a bit worse for wear (green leaves wilted etc).

    Soooo.. i have no idea what i'm going to do with them all! Chooks will be getting all the greenery, but aside from the cauliflower cheese i was planning to do with the first cauli, what else can i make with the other two? OH and the kids don't like cauliflower cheese, so can't make 3x the amount.

    Looking forward to answers :o

    Is it the cheese bit that they don't like...? Or the cauliflower?! :p:o

    I love cauliflower in curries. I would probably put it with spinach and chickpeas...yummy! :D

    If you are trying to disguise the cauliflower, you could always mash it into potatoes to top cottage pie (get a hidden one of their 5 a day into them!), or I think it can be put into soups as well - I don't personally have a recipe for a soup with cauliflower, but I'm sure somebody here will have a tried and tested successful recipe! ;)

  • cauliflower soup is delicious and I believe it freezes well too. I have a nice simple recipe somewhere that I think is called parisian califlower soup - if you want me to find it and ost it here pm me and I will!
