Spicy Cauliflower soup. Seems a shame if it's a prime example of cauliflowerhood though."Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"

here are one are two more suggestions. I can recommend cauliflower curry if you are looking for something a bit different to cauliflower cheese.0

I love cauliflower cheese but always found colly as a veg a bit much (too cauliflowery
) even with white sauce. Then I found Creamed Cauliflower.
Cook colly in lightly salted boiling water until tender. Drain well. Meanwhile make a white sauce with 1 oz butter, 1 oz flour, 1/2 pt. milk. Season to taste with salt, pepper, grated nutmeg. Mash cauliflower in saucepan, pour in white sauce and beat till fairly smooth. Put in veg. dish & grate a little more nutmeg on top.
This makes a nice side dish when curried or spicy cauliflower just won't work with the rest of the meal.0 -
Hi,
I'm going away today for a 3 day excersise with the TA,In the fridge I have/had three quarters of a head of cauliflower. Now not wanting to waste it I cut it up & bunged it in a pan to blance before I could freeze it.
Moron here then forget about it,only just remembering about it!
Just went to look at it & half of it's soft as a soft thing & the rest is tender.
So,is it still ok to freeze it or would I be better binning it?
I feel such a pr-at!!!0 -

Can you make it in to cauliflower cheese soup and then freeze it?The trouble with the world is that the stupid are cocksure and the intelligent are full of doubt.Bertrand Russell0 -

I'm never one to bin food without a fightIt'll proably not be fit to eat as is, but I'd freeze it. I'd then sorten some onions, add the cauli and some milk. Blitz to a soup, and serve with lunps of Stilton melted into it - yummy :T

I make cauliflower into a "mash" for my MIL who can't eat potatoes, with overboiled cauli and cream cheese, it's delicious, why not freeze it, and do that with it when you come back?
Or you could also cook up a basic veg stock with leek celery and a carrot, and puree it altogether into a soup? It's what is inside your head that matters in life - not what's outside your windowEvery worthwhile accomplishment, big or little, has its stages of drudgery and triumph; a beginning, a struggle and a victory. - Ghandi0 -
