for my version I cook a potato with the cauli (chunked up small)! then mash and add white pepper and a little butter. thinking about it - I add some finely grated cheese for the little ones -they seem to like it better as caulicheese!
  • My MIL can't eat potatoes and if I don't have celeriac for her I do cauli cheese by steaming the cauli (boiling would be fine) and pureeing it with philly or similar and lots of black pepper and salt, its delicious.

  • My dh has returned from the allotment with 3 huge specimens. I have searched for cauliflower recipes on here but found nothing. I am looking beyond cauliflower cheese (!) to curries or soups and maybe some other delicious meals I can make.

Ideas please folks - must be economical (obviously) and low fat.
:D Skint but happy with my lovely family :D

    Hi purpleheather,

We have an existing thread that has many recipes that should help so I've added your thread to it to keep the suggestions together.

Right. Here we go again (here's hoping something doesn't get "merged" while I'm typing this ):

    Cauliflower and Parsnip Royal Korma

This is for the slow cooker.

    large onion, finely chopped
    2 tbsp korma paste
    large parsnip, diced
    medium cauliflower, separated into florets
    50g ground almonds
400ml can of coconut milk (to cut down on calories, I use half fat or light coconut milk)

Place onion in slow cooker dish, add the curry paste and coconut milk and mix. Add the ground almonds, cauliflower and parsnip and stir until all the veg is covered. Cook on high for 2 hours or until veg is tender. Serve topped with coriander leaves (optional).

The flavours develop over time so this is best cooked 24 hours in advance and kept in the fridge, covered. It can also be frozen.

I've also tried this nice curried cauliflower soup:

and there was an okay cauliflower curry (which was more of a side dish):
