How about cauliflowers fritters? When I do these I add curry powder, but could add peas, carrots, paprika? (Anything really :rotfl: ) I also do them in a nonstick pan, with just a little oil.
Cauliflower Fritters
1 small head cauliflower (1 1/2 lbs.)
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons water
1 egg, slightly beaten
1 medium onion chopped
1/4 cup oil
Separate cauliflower into small florets. Bring salted water to boil and add florets, bring to boil again, cover and cook 5 minutes. Drain, coarsely chop and set aside.
Mix flour, salt, pepper, water, and egg then stir in onion and chopped cauliflower.
Heat oil in large skillet, drop cauliflower mixture by tablespoonful into the hot oil and sauté 3 minutes on each side or until brown
Drain on paper towels

But last time I had a cauliflower emergency, I tried making an "aloo gobi" type dish... and it's become a staple in our household! Super easy:
Chop up the cauliflower into florets
Dice some potatoes (an amount roughly equal to the cauli)
A tin of diced or stewed tomatoes, or a few raw tomatoes plus a small tin of paste...
Some curry powder or similar spices (turmeric, chili powder or cayenne, etc...)
Onion
Garlic
Peas, or carrots, optional
Start by frying up the chopped onion and minced garlic for a few minutes... add the rest... simmer it until there's not too much liquid... that's it! Takes maybe twenty minutes, tops...
A lovely dish on it's own, or over rice... or sometimes, when I reheat it, I throw it in a pan with a bit of tofu that I just break up into bits... the tofu takes on the flavour of the curry, and adds a bit of cheap protein to the mix.
Hope that helps in future!0 -

I made cauliflower soup at the weekend and it was gorgeous. Just put cauli into a pan with 1.5 pints of chicken stock and simmer until soft. Add salt and pepper and garlic (if they like it), and when cooked, blend put back into pan and add some milk or cream. You're only young once, but you can be immature forever0

Blitz it into tomato pasta sauce. But really, if they don't like it, why force it on them?******** Never be a spectator of unfairness or stupidity *******"Always be calm and polite, and have the materials to make a bomb"0
