Ooh, thanks for that - I'd never have thought of using dried apricots. :drool:
350g of dried apricots (cut up). Simmer in 2 litres of water for 20 mins then drain. Add 800g sugar & leave to cool. Add pectolase. Add tannin and some grape concentrate (we cheat and leave 100g of chopped raisins in a cup of black tea overnight). Add yeast & top up with water. Rack off once fermented and leave for 6 weeks before bottling. Improves over the next 6 months, but it never lasts that long!!In the beginning, the universe was created. Jennihen, one of my better winemaking attempts (some years ago, before I met Mr LW) was potato wine, made from the tatty tail-end of a big sack of Value spuds from Tesco. Only thing was, you needed to sit on the floor before you drank any!:rotfl:]
