  • The chinese technique of "red cooking" involves cooking food slowly in a soy sauce-based liquid, which gives the dish its deep red color. It also contains spices such as star anise and five spice powder. It;'s best made with a fatty meat, usually pork, as the fats turns into a delicious savoury jelly, naughty but nice in small doses! The resulting sauce is delcious over rice and with stir fired cabbage.

It's easy to cook, just chcuk all the ingredients in and simmer slowly for 2-3 hours. I've never seen it on a restaurant menu locally (which is a shame as it is very moreish) probably becuase it is so humble.

    Fivenations,

I didn't know what red pork was so I googled it.....and it does look as though it would be ideal for the slow cooker. If I was you I'd give it a go. It sounds delicious...if you do try it would you come back and let us know how it went?

Three Dancing Dragons, have a look here for recipes for red pork.

  • Ooo, thanks PinkWing. I used to have a local Vietnamese restaurant that did this and haven't found anywhere as good in Edinburgh. (Used to love it sliced in pancakes with salad veg - like a big christmas cracker).

  • Sounds yummy, I have a half leg of lamb in the fridge for tomorrow, so I'll give it a try

  • Sounds lovely - do you think it would work with pork or chicken as I don't have any lamb?

Do you fry the chicken breast over first? How long do you cook for?
