Parsnip soup recipe please

Can anyone please tell me how to make parsnip soup or cream of parsnip soup?
I did look in the index but couldnt see it?
Guess what were having for tea (well if I can find out how to make it that is)

    I'd cook them in stock (maybe add chopped onion), then puree them, and stir in balsamic vinegar and caraway seeds if you have them to taste. It comes out completely wonderful!

    Parsnip soup mmmmmmmmm heres my fave
    1 medium to large onion
    1 medium potato
    1 medium granny smith apple/or cooker
    4/5 parsnips
    1pint chicken/veg stock
    some milk

    lightly fry your onion to soften,add chopped spud and chopped parsnips with apple,pour over stock and simmer until all is soft,takes about 30min add milk at the end then blitz everything in blender,this is also very good if you add a spoonful of curry powder,add more stock or milk if you think its too thick.
    the apple is optional as with curry powder,it does however make a cracking winter warmer.

    Its an organic delivery service but on the website they have a recipe section, they have a load of parsnip soup recipes (eg. parsnip & apple, parsnip & parmesan).

    They usually have seasonal recipes on the main site as well which is useful if you have an organic box delivered and don't know what to do with half of the stuff in it!

  • This is an easy one to make:

    1 onion, chopped
    1 lb carrots, peeled and sliced
    12 oz. parsnips, peeled and sliced
    2 tbsp vegetable oil
    1 tbsp ground coriander
    2 pt. vegetable stock
    fresh coriander or parsley to garnish

    Sweat onions, carrots and parsnips in oil in a covered pan for 10 min. Stir in coriander and cook uncovered for 1 min. Add stock, cover and simmer for 20 min. Cool slightly. Process or liquidise, return to rinsed-out pan and reheat. Garnish with fresh coriander or parsley.

    I like Parsnip and Bacon Soup from the Sainsbury's recipe pages. It's dead easy and really yummy. I have made it with leftover boiled ham or even BOGOF rashers, it tastes different each time but it is always a success.
