    I love parsnip soup, I put in cumin (heated a bit at the start) and chilli flakes.

    I quite fancy trying parsnip soup - its only the past few years that I have enjoyed parsnips and love them roasted with honey.

    So I wondered if I could roast parsnips with honey first and then make soup? Has anyone done this before?

    Any recipe ideas would be fab, thanks :)

    Hi frugal,

    I wouldn't be keen on roasting them in honey first as parsnip soup is already quite sweet and that would make it too sweet for my taste. What I do is to sweat them with some potato, onion and garlic in little butter and oil before adding stock and spices.

    parsnip and apple is lovely as well and if you use a sharp apple it cuts some of the sweetness.

    I would give it a go myself. It astounds me on how many different combinations of ingredients you can put together to make a tasty soup. I prefer curried parsnip though, as I don't like too sweet a soup.

    That's my favourite too. I normally use a cooking apple for extra sharpness

    mmmmm... parsnips, Bramley apple, bit of chilli and a big spoonful of crunchy peanut butter stirred in after blending to give an interesting texture.....yum!

    Definitely. Vegetables roasted then blended with stock into soup is gorgeous, especially if you reserve a few small chunks of roast veg to add some crunch :D
