Can I ask a daft question? Does parsnip soup taste parsnipy? I really don't like the woody taste of parsnips which puts me off making soup using it, but they are good value this time of year and I'd like to try. I'm hoping that by the time it's been diluted with stock, soup probably just tastes nice and not like parsnip? Sorry if this is daftPiglet

hey piglet, my OH hates parsnips but he'll eat my parsnip soup.
Recipe
Bag of carrots 1kg
Bag of parsnips (prob about 4)
veg stock to cover
teaspoon 5 spice
300mls ish of skimmed milk, I use powdered made up
salt and pepper to taste
put in a pan and bring to the boil then simmer for half an hour or so, then blend.

Me too piglet, I'll eat a roast parsnip if I have too (ie at friends houses) but don't enjoy them. BUT curried parsnip soup I really enjoy and I'll happily make it to take to work for lunch in the cold weather.
Think i make mine with curry powder and a few cumin seeds - but will dig out receipe0 -
I'm looking forward to making some now, I'm having a bit of a winter soup fest at the moment. I'll probably put in some chilli flakes though, I don't like curried stuff (fussy cow me! although in my defence curry often makes me sick! :eek:)Piglet

We make this one from Jamie Oliver and it's yummy. I normally make a large batch for the freezer and we take to work in our lunch flasks
Ingredients
• olive oil
• knob of butter
• 1 large onion, peeled and roughly chopped
• 2 cloves of garlic, peeled and roughly chopped
• a thumb-sized piece of fresh ginger, peeled and roughly chopped
• 1 tablespoon garam masala
• 6 parsnips, peeled and chopped into chunks
• 500ml milk
• 1 litre vegetable stock
• sea salt and freshly ground black pepper
Heat a splash of olive oil and the butter in a large saucepan. Add the onion, garlic, ginger and garam masala. Gently fry for around 10 minutes, until the onions are soft and sweet.
Drop in the chopped parsnip and stir together so that everything gets coated in the oil and flavours. Pour in the milk and stock, season well and bring to the boil. Turn down the heat and simmer for 30 minutes with a lid on.
After half an hour, check that the parsnips are cooked by sticking a knife in. If you’re happy, remove them from the heat and carefully whiz up using a hand blender or liquidizer. Taste the soup to see if it needs a little more salt or pepper0 -
