Fry some finely diced onion and chopped sage, allow to cool. Mix with sausage meat. Form into sausage shaped logs and roll topside minute steak around it. Brown rolls all over, place into oven dish, cover with some gravy and cook in oven for 40 mins. Serve with mounds and mounds and mounds of creamy mashed potatoes. I'm hungry now....

meatloaf: mix sausage meat with some applesauce (lidl), diced carrot onion celery, a bit of tomato paste, egg, breadcrumbs, seasoning and some wocesterhsire sauce bake in moderate oven for 2hours.

Sausage rolls. I love sausage rolls, but find that shop bought ones are a bit boring. Try spicing the meat up with some veg or herbs or some curry or chilli powder before wrapping in puff pastry. Could even use the meatloaf mix for sausage rolls.

You could make stovies. It's the one thing that makes me sorry I'm a vegetarian.

You can make gala pie.Make pastry, line a loaf tin with it half fill with sausage meat, lay a line of hard boiled eggs along the centre and infill with sausage meat, then put a pastry lid on and bake it.When cold, slice it up .
Sausage balls coated in breadcrumbs are nice too or battered like the chinese takeaway.

Make up 80z shortcrust pastry and chill in the fridge for 30 mins

fry one finely chopped onion, mix in a bowl with 1lb sausagemeat and one tine of chopped tomatoes and a spponful of mixed herbs.

Roll out pastry and line a pie dish, cover with sausagemeat filling and top with remaining pastry, bake at gas mark 5 for 40 minutes.

One of our favourite "day before we're due to go shopping again" meals is "Sausage Lumps". Not a very glamorous name for a not very glamorous dish, but we love 'em. :)

Grab your sausagemeat (for 3/4 people the equivalent of eight sausages-worth) and one pack of stuffing mix. Get as glamorous as you want on the stuffing mix, but I use the cheap-as-chips version from Asda.

Make up the stuffing mix with a little less water than it says on the packet, and without any additional oil or butter. Allow to cool for a moment or two and then mix with the sausagemeat and form into balls.

Roll in breadcrumbs or rolled oats and place on a greased baking tray. Bake in medium oven for about 15-20 minutes and then carefully winkle them off and turn 'em over. Give them about ten minutes more and then serve with mashed spuds and baked beans.

    Deeeeelishus!! :D

A friend has given me two lots (2lbs in total) of sausage meat. It's currently sitting in the freezer, but I don't have a clue what to do with it. Any ideas? I've tried to find ideas on the Recipe thread, but can't see the wood for the trees! :)

    Thanks

Hi VickyA. Put it in the bin! That's the best advice - not only is it unhealthy for pigs, it's horrendously unhealthy (and disgusting) for humans too - it's made of the left over pig parts that they can't persuade you to eat in their real form (such as intestines, trotters, brains, offal, bones, etc, etc)!

So do yourself a favour and bin it! ;)
