What can I do with sausage meat?

We recently had some sausages in a meat pack that, after tasting, we weren't keen on at all. I defrosted them, skinned them and then added some stuffing mix to them. I put it into some pastry as a sausage plait, and both OH and I loved it. He wants it again, very soon and even took a photo of it to show the guys in work.Good enough is good enough, and I am more than good enough!:j
