Hi OP,
Your idea of combining sausage meat and mince for meatballs works fine, it's exactly what I do when I can't be bothered to use minced beef plus minced pork plus breadcrumbs. You can add an egg if you like, or it works ok without. I add finely chopped onion, garlic and sometimes red/yellow pepper too. I usually make my meatballs small - about the size of a walnut - and put them in a homemade tomato sauce, then serve them on either rice or pasta. You can freeze them in the sauce once cooked, or open freeze them then bag them up and make the sauce when you defrost them.

Good Morning!
I have sausage meat which I took out the freezer yesterday and am making rissole today.
I will have a fair bit left over and other than meatballs and pork & apple burgers, what else would I make with the leftover uncooked meat? I could do sausage rolls or a pie but i can't make pastry and would rather something.
your suggestions once again will be so appreciated.
Thank you
