  • I second the scotch eggs, I make them all the time and they are so scrummy and much better than the shops! Bit messy to do but very worth it.

    I cook it and eat it with mash, veg and gravy for dinner. My mum uses it sliced thinly in sandwiches.

    Sausage rolls, stuffed in a chicken/turkey etc.

    I LOVE sausagemeat as a snack, I don't buy it often simply because I could scoff the lot :o

    i like mixing sausage meat with some made up sage and onion stuffing. then using it for sausage rolls or sausage plaits. Isn't too over powering and just gives it a little somethign more. very scrummy.

    i always add grated cheese to the top of my sausage roll's. very moreish indeed.
  • I use sausage meat to make stuffed vegetables - peppers and aubergines work really well.
    Fry the meat with some diced onion, using a wooden spoon to mash it up a bit and separate it as it cooks (as you would with mince to stop it sticking together). Mix with some cooked rice, and add grated cheese and egg to bind. Add herbs, mixed dried, or some garlic and chillies to taste. Stuff into peppers or scooped out aubergines, sprinkle with cheese and cook for about 15 minutes until the veggies are soft and the rice has bound together (to speed this up microwave the veg for a couple of mins first).
    Tasty, healthy and fun for kids to eat, because they can pick them up with their fingers when cooled down!

    You've inspired me! I am going to make something simular to this (no rice) but add mushrooms and Courgette to make it suit my health issues :D

    I make sausage plait, but also this.

    Sausage Bake

    Chop an onion, cooking apple and carrots and place in the bottom of an oven proof dish. Top with a layer of sausagemeat and then mashed potates. Bake in the oven for about 40 mins at 160 or until sausage meat is cooked and it is lovely. Season sausage and veg with whatever herbs that you fancy. Works best if the sausagemeat is not too fatty, just enough for the flavours to mingle.
  • I thought of another one, what about bean and sausage pie? My OH loves this and I normally fry/grill square sausage and layer baked beans on top and top with pastry but for the people who like veggies you could add mushrooms, onions, tomatoes etc in too.

    I did it once with sausage meat and it was yum even though I don't really like it.

    My 13 yo son had to design and cook a filling for pasties at home ec this week - he came up with sausage and caramelised onion, he added a bit of grainy mustard too and there were yummy - with a bit of mushroom in too they will def become something I cook again. i was pretty impressed with his idea tbh
