    Freeze 6 packs, mince 2 and make a huge hot chilli.

    Crispy Sausage Balls

    Makes 16

    12oz pork sausage meat
    4oz grated cheese
    3oz oats
    1 garlic clove, crushed
    1 egg, beaten
    Salt and pepper

    Preheat oven to Gas mark 5 (190C)
    Put all ingredients in bowl and mix thoroughly. Season
    Shape mixture into 16 balls
    Place on a baking sheet and bake for 30 mins

    These can be served hot or cold. I add worcestershire sauce to mine.

    The obvious one would be sausage rolls I guess. Healthier options for this time of year may be a soup or with spaghetti , even put it on a pizza (not so healthy!);)

    Sausagemeat pie: sausagemeat with or without onion/herbs put into an oven dish and covered with mash or pastry.

    Meatloaf: some recipes use sausagemeat and mince

    I used to love sausagemeat pie at school dinners. That one was done with a pastry base and a pastry lid - and served with boiled potatoes and baked beans.
  • make sausage rolls/pasies but with roasted veg, caramelised onions, apples, etc bit healthier!
    meatballs in a nice tomato sauce,
    or add thai/vietnamese style flavours (chilli, ginger, lime, lemongrass, garlic, fish sauce etc , or paste) fry off little balls and serve on crisp lettuce leaves garnished with spring onion, cucumber and any asian toppings/dips!

    i made yummy HM stuffing from the 'easy christmas' cook book from M&S sausage meat (though its a bit out of season for stuffing now lol!!) it combined sausage meat, pureed chestnuts, walnuts, dried apricots and a few herbs, it was deeelish!!! :D

    i also used to make a lovely lasagne made with sausage meat - recipe by Mary Berry

  • wow thanks for all the replies, all sound yummy but Mr Panda doesn't eat cheese :rolleyes: could I just leave the cheese out?

    ohhhh sausagemeat pie. oh I am drawling. I love it.

    Or meat stuffing and have that as dinner . yum.

    BTW - Ive frozen sausagemeat pie in portions and its been fine.

    I like the sound of making sausage rolls, with different herbs/spices.

    Would buying a packet of ready made puff pastry be fine for making sausage rolls?

    For a buffet last night. I mixed 1lb sausage meat with five hard boiled eggs cut small and mixed herbs. Put onto some rolled out puff pastry and on either side of the sausage meat cut pastry into strips (hope that makes sense) and plait pastry. Cook and serve also great served cold for pack lunches . HTH
