nigel slater has a lovely recipe for sausage meat rolled into little balls, cooked and then add sliced onions, some wine, parsley and mustard to the pan for a lovely sausage pasta sauce.0

I use sausage meat as it's cheaper at my butchers, I use it to make a meatloaf with mince, sausage meat & stuffing in vaugly equal quantities.

Sausage meat - from local farm shop where they have their own pigs. Decision based on price. Their sausages are more expensive. If it were the sausage meat that were more expensive, I would skin the sausages.0

I'm trying to clear out my freezer and have planned meals with everything apart from 4 packs of sausage meat, left over from last Christmas. I'd like to use it up as a main meal, rather than an add on for a roast. I've looked on the internet for some recipes ideas, but I can't think beyond sausage rolls. I've got a Sausage Meat block and would like to hear any recipe ideas that can feed a family.

My big sister used to do a sausage plait!
Pastry rolled out
cover with tomato puree
spread out the sausage meat
Take 3 long and fairly wide bits of pastry and pait over the top, making sure that the sides are covered too!
She sometimes added in onion and other things too, always a family favourite!

my lot love homemade stuffing, they love it with chips and gravy as well as with the roast. Sausagemeat and pie bean goes down a treat too. I do sausagemeat and onion in bottom of pyrex, then layer of beans then layer of potatoes or pastry and cook in oven 180 for about 30mins. sorry not very exciting recipes. HTH.0

What about a sausage plait - add chopped onion, gently fried and cooled before adding to the sauage meat, some chopped mushrooms, dried mixed herbs about a teaspoon, mix together with 1 egg, roll out puff pastry into a rectangle, put sausage meat down the centre ( I gently mark the pastry into three putting the sausagemeat in the centre third) cut the other two sides into slices upto the sausagemeat at an angle of about 45 degrees, take one over the top of the sausagemeat, put a little water on it and do the same with the other side, until you reach the bottom, the plaited pastry might extend past the sausagemeat I normally gently lift and tuck this underneath as I put on a baking tray, takes about 30 mins in a moderate oven, before cooking I sometimes brush with egg and sprinkle with sesame seeds.
or a sausagemeat pie, add onion and mushrooms as above, put into the bottom of a deep pie dish, top with a tin of beans or spaghetti and top either with pastry or crushed plain crisps mixed with a little more onion and grated cheese.Fibro-Warrior0 -
I mix sausagemeat with an equal quantity of made up sage & onion stuffing. I then use this mixture to make pasties. They're really tasty & using the stuffing extends the sausagemeat so it goes twice as far. Very MSE.0

Wow ... I'm blown away!
Four replies in less than 15 minutes, thank-you for not laughing at my Meat Block! I've been looking at the packs in the freezer for months and have never had any inspiration. I'm not a big poster MSN and spend most of my time on DFW. However, now I think you'll be seeing a lot more of me. I can't believe all the tips and recipes I've been missing after having a quick look through the board.
