I thought I'd just posted this but can't find it! Mix sausuagemeat with some Paxo stuffing mix, a chopped onion and an Oxo. Add a beaten egg to bind, put in a loaf tin covered with foil, or wrap the meat in foil, and roast as a meat loaf in the oven. Delicious hot or cold (it slices really well when cold).KNIT YOUR SQUARE TOTALS:

there's a sausage casserole recipe - you could slice some rings or cut into small cubes before its fully thawed although I'm thinking you shouldnt actually cook it until its completely thawed? or is that old hat now?
a few variations on the sausagemeat plait here and making a sausage pie might be useful too, just variations on a theme but useful to see other suggestions... don't throw the string away. You always need string!

My Mom used to use sausage meat when she could find it cheaper than normal mince to make a bolognese sauce. You can either use just the sausage meat, or mix it half-and-half with normal beef mince. It gives the sauce a really nice flavour, but the texture if just using sausage meat is a bit different, it is usually minced a lot finer than beef. Still something I ocasionally crave! Might just have to get some and make it when we have run down the stuff in the freezer.Trust me - I'm NOT a doctor!0

Hello all, wondering if you can give me some inspiration!! Whilst sorting the freezer out the other day I found 2 lots of sausage meat. Normally I just mix with onion, sage, thyme and some bread crumbs, put in a pyrex dish and cook in the oven.

It goes without saying that you are going to have to defrost them thoroughly, and do not chill the food, or reheat it again, particularly with pork.
As for ideas, you could make spicy pork meatballs/burgers, just by leaving out the sage, and adding chilli powder, turmeric, and a little garam masala, as well as the usual salt and pepper. I reckon that a handful of finely chopped fresh coriander added to the mix would work well.
You could also try making a terrine, because once you have made it, you can simply serve slices cold with a salad, and that removes the need to reheat it. If you do make a terrine, then finely chop onions or even better shallots, and fry until soft in a pan with butter and crushed garlic, then put aside to cool thoroughly. This time of year is ideal for chestnuts and they go really well as a layer, as well as being chopped and added to the pork mix. You can also use leeks or asparagus as one of the layers. Another idea is for a seasonal terrine (good time to practice this for Christmas), using pork, chestnuts, chicken/turkey and a fine layer of cranberry. I would also add some orange zest to the pork mix for this.

If you've got or could get eggs and bacon cheap (and pastry) you could make egg bacon and sausage pie. Put the bacon on the bottom of the pastry, then put six to eight sausage shapes in the pie, then fill in the gaps with egg, then top and put in the oven for about 40 minutes at about 180. I bought some frozen sausages (not even the cheapy ones), and it turns out they are useless - not very meaty or tasty. But rather than throw them out of give them to my mum for her dog, I was wondering what recipe ideas people might have to use them up?
They're definitely no good as sausages not even a sauce so I'm thinking of adding the sausage meat to minced pork or turkey maybe. Any other ideas or recipe/meal ideas gratefully received.:)A waist is a terrible thing to mind.0
