What can I do with sausage meat?

  • Mix the meat with some stuffing mix (or breadcrumbs and spices), roll into balls and put onto squares of puff pastry with a layer of cooked red onions / leeks first. Fold up the corners to make parcels and bake. They're good hot or cold.
  • Which sausages were they? Where from / what range?

    Asda sausages, just pork ones. I bought them to have some in the freezer on standby, as I'd bought them before, but the quality has gone down hill.

    Only thing I don't like is pork and beef mixed together so any other recipes ideas would be good. Knowing me, I'll just end up using them to bulk out some home made meatballs. :o

    Hi there

    I would go with carrot and sausagemeat pasta. Basically you need

    1 large Onion
    Sausagemeat
    2 large carrots
    Chicken stock
    Tinned tomato
    Bay leaf
    Seasoning

    1. prepare and chop onion - fry slowly in frying pan
    2. break sausagemeat into tiny pieces and add once onion is soft
    3. Cook 5 mins then add carrot - grated into the dish
    4. Cook 5 mins then add 1/4pt chicken stock
    5. Add 1 tin chopped tomato and bayleaf
    6. Season - cover and cook slowly for 20 mins

    Serve with pasta of your choice - some kind of pasta tubes, bows, shells works better than spaghetti or linguini

    Optonal extras

    You could add a glass of wine, mushrooms, peppers, etc - you can bulk it out with anything realy. The point is that you dont need tasty sausagemeat in it - i usually buy the cheap whoops trays of sausagemeat left over at Christmas, and use that.

    I managed to get two lots of sausage meat reduced the other day. I have them in freezer ready to use.

    I don't really want to make stuffing or sausage rolls but i can't seem to find anything else to do with it so i thought i'd ask my moneysaving friends on here if they have any nice recipes.

    I make meatballs with it. Fry off some onion and add fresh or dried sage. Season. When the onion mixture cools off add to the sausage meat and form into small meatballs. I then fry off the meatballs and add them to a a nice spicy tomato sauce with some hidden veg grated in so DD won't notice.
    Lovely served with mash or pasta.

    Yup, same as maro11, we make meatballs with them. I bulk them out with other veggies before shaping them into balls. Then with a spicy sauce too

    I make sausage and onion pie with it in shortcrust pastry, fry the onions first and add on top of the sausagemeat.
    Lovely hot and even better cold for lunchboxes.

    I also mix with other meats and garlic to make meatballs, try experimenting with different types of mince and herbs and spices to get some really different tasting ones, the sausagemeat gives them a good texture.
