What can I do with sausage meat?

    I often use half sausage meat and half beef mince in meatballs.

    I've got two packs of this as well in my freezer and I haven't figured out what to do with it yet. They were 1p in Tesco at the time, how could I refuse?!

    My mum makes the nicest pigs in blankets out of it, but they are a Christmassy thing, so I didn't do that.

    I suppose you could incorporate it into stuffing if you make stuffing by hand rather than the packets of Paxo.

    :D I make up some paxo, mix it with sausage meat and a squirt of tomato puree, bung it in a loaf tin, whack it in the oven.......MEATLOAF!!!!!

    I roll out some puff pastry, and then put in a mixture of sausagemeat, grated apple, onion and herbs, - baked for 1/2 an hour it makes a lovely giant sausage roll/pie.
  • Cook it and then have sausage meat sandwiches for work all week - yummy! :rolleyes:

    Thias is a fave and I'm so happy when I get a cabbage in my veggie box so I can make it.

    Slice up a cabbage, lightly cook it (3 or 4 minutes in boiling water).
    Lightly grease a baking dish
    Alternate layers of cabbage with layers of sausage meat, seasoning lightly with salt and pepper in the layers.

    Cook covered for up to 2 hours.

    The cabbage becomes all mushy and tastes of sausages!

    We've just had sausage bolognese for tea. Just use sausagemeat instead of mince. My kids can't get enough of it.

    My other sausagemeat dish (actually I tend to use butcher's sauasages skinned) is meatloaf.

    Meatloaf
    Squelch together
    1 lb mince
    1lb sausage meat/skinned sausages
    1 finely chopped onion or 1 cup veg hash (see here)defrosted
    2-3 tbsp ketchup
    2-3 tsp Worcester sauce
    3 oz oats
    salt and pepper
    any other spices/seasoning you like

    Press into a greased 2lb loaf tin, or shape into a loaf and place on a baking tray.
    Bake at 200c for 1 hour

    Great hot with mash, gravy and veg, even better cold and thinly sliced for sandwiches.

    Next time I make this I'm going to shape it into burgers, it also works brilliantly as meatballs.
  • I just chop up some onion and mix that in, make into individual ball shapes and then flatten, shallow fry, yummy with mash
