Hi All
I have some sausagemeat in my freezer which I need to use up. Has anyone got any nice recipe ideas apart from sausage rolls, which is what I always use it for.

Spaghetti meatballs? Jamie Oliver made some meatballs from sausages...and he made it in 10 minutes and it actually looked good....Sealed Pot Challenge 2012 #1502:)

Slight variation on a theme but howsabout a savoury plait? Instead of sos rolls
Buy *coff* some flaky pastry - hey I have made it in the past but who can be bothered dot dot dotting all those teeny bits of butter around. Roll out into oblong and then lightly mark into 3 lengths. In the middle length pile mix of sos meat, onions, herbs, breadcrumbs, egg to bind - erm not too sure on this as I usually do this with a tuna mix - sure someone could give you nice recipe tho - and then the left and right sides into diagonal strips...............erm, how to explain this, think of it like a cross over braidey type thing - in effect you want lots of lil strips still attached to the main centre strip that you are going to cross over each other left, right, left etc
Clear as mud huh? LOL Anyway brush with milk/egg, bake and this can be sliced up and eaten hot or cold. Looks impressive but is easy peasy lemon squeezyComps £2016 in 2016 - 1 wins = £530 26.2%

I agree, young master Oliver's sausagemeat meatballs looked good, although you would need to have the facilities to deep fry them. I was just amazed that he didn't manage to shoehorn any balsamic vinegar or rocket into them.
This recipe is supposed for a stuffing for the Christmas turkey, but it is so good I reckon it could stand on its own merits as a sort of meatloaf.INGREDIENTS
2 lb of sausagemeat
8 oz of mushrooms
6 oz of onion
4 oz of fresh white breadcrumbs
2 oz of butter
4 tablespoons of cranberry sauce
1 tablespoon of fresh parsley
1 chicken or turkey liver
1 egg
Salt & pepper
METHOD
Roughly chop the mushrooms, parsley and the liver. Slice the onion. Beat the egg. Melt the butter in a pan and fry the mushrooms, liver, and onions. Allow to cool, and place in a food processor with all the other ingredients. Process until thoroughly mixed.The acquisition of wealth is no longer the driving force in my life.0 -
I make rissoles or meatloaf with sausagemeat. Its the same mixture for both - you just mix 1lb sausagemeat, 1lb lean mince and a small packet of paxo sage and onion stuffing (made up). Mix together in a bowl and bind with a beaten egg then shape into little rissoles and bake in the oven for about 15 - 20 minutes, or put the whole lot into a 2lb loaf tin, greased, and cook in oven at 180 for about an hour and 20 minutes.Jane
