What can I do with sausage meat?

    Hi all

    Very new to MSE so please be gentle with me !

    To cut a long story short, I have a freezer drawer full of sausagemeat (Sainsbury's paid me to take them away - had a BOGOF offer but were reduced so they paid me 42p each to take them off their hands ! Suffice to say I bought a basket full !) I bought other things too so that when I got to the till I made sure I still had to pay a £1 or two - didn't want to draw attention to their mistake ! :eek:

    Short of sausage rolls and sausages, does anyone have any good recipes that I could use to make it a bit more interesting ?

    Just to say quickly too, what a fab site and great ideas from everyone - i'm learning and saving money by the day ! :T

    There's an older thread with lots of sausagemeat recipes that should help. I'll have a look for it and add your thread to it to keep all the suggestions together.

    I found a recipe on a French site which was just a layer of mashed potato with a layer of sausagemeat (which had been browned with onions) on top, and then another layer of mash on top of that plus some grated cheese. Brown for 15 mins in a hot oven.

    At least I think that was what it was :o It is called Saucisse en gratin.

    This sounds good. I bet it would work with other fillings too. What fascinates me is that the French very often use instant mash.

    I stayed with a family in Bordeaux and Vivianne made this for her grandchildren. She cut beef into tiny matchsticks and fried them. She then mixed them with seasoned mashed potatoes - sometimes made herself - put it in a dish and sprinkled cheese on top and put in the oven to brown off. I asked her for some but she told me it was for children! I sneaked a taste and it was very good. They ate it on its own and followed it with salad.
