In need of 1001 things to do with tinned tuna !!

  • I've had a look through the complete cooking collection, and apart from fish cakes and tuna omolette, I can't find any recipes for tuna. I love tinned tuna, and will have the meal below at least once a week, as well as taking tuna, mayo and sweetcorn sandwiches to work a couple of times a week. I'm looking for more recipes using tuna, there must be other people out there who cook with tinned tuna.

    Curried Tuna & Mushroom Pasta

    Served 2-3

    Ingredients

    1 185-200g tin of tuna in brine
    1 tin creamed mushrooms
    1 tin sliced mushrooms or 100g fresh mushrooms.
    50g Frozen peas
    1 tsp Curry powder
    1 tsp curry paste
    5oz pasta

    Method

    Drain the tuna (I use the top of the tin to squeeze out the brine so the tuna is very dry) and lightly fry in a little oil in a non-stick sausepan. Take care, damp tuna in hot oil will spit and also try to stick to even non-stick saucepans.

    Drain the tinned sliced mushrooms chopping up any large slices or finely slice the fresh mushrooms and add to the tuna.

    Add the frozen peas and the curry powder and mix well.

    Pour in the creamed mushrooms, then fill the tin with boiling water and add to the saucepan.

    Dissolve the curry paste in a teacup of boiling water and mix in to the saucepan.

    Bring to the boil then simmer on a low heat, stirring regularly.

    Meanwhile add the pasta to a pan of boiling salted water, I normally use a mix of pasta twirls (fusilli), shells (conchiglie) and tubes (penne), but bows (farfalle) or even macaroni could be used.

    Once the pasta is cooked, drain and stir into the tuna and mushroom sauce, making sure all the pasta is covered in the sauce, then serve.

    For me its gotta be..

    Toast 1 side of bread, put tuna on the other, the top with really strong cheese and pop back under grill to melt mmmmmmm

    I just mix tuna and corn with lite mayo for jacket potatoes topping.

    Tuna, mash and an egg makes lovely fishcakes - I don't really have a 'recipe' as it's add it till it looks right :). It's also nice if you add some green thai curry paste. I normally breadcrumb them and bake them, but you could fry them too.

    i make a fab tuna pasta bake, boil pasta with veggies (carrots, onions etc) put in dish, mix in tomato based sauce and tuna and top with cheese, then bake in oven. Doesn't take long and tastes yummy.

    I used to make this when my kids were small and now my grandchildren love it too.. its pretty fattening but its so delicious as a treat now and then.. it makes enough for 4 or 5

    Tuna Casserole..

    2 tins tuna in brine drained
    one small chopped onion
    3 boiled eggs sliced
    large pack of plain crisps
    tin of condensed mushroom soup
    large tin evaporated milk

    stir the soup and evap milk together in a jug, in a deep casserole dish layer the other ingredients , tuna , onions, eggs, crisps , I do 2 or 3 layers, keep enough crisps back to put a layer on top... then pour over carefully the jug of soup and evap and cover with slightly crushed remainder of crisps... bake at 170 for 30 mins... serve with salad and crusty bread...

    Me and my kids seem to live on tuna....pasta bake (pasta, broccoli, sweetcorn, tomatoes, tuna, covered in a bechamel sauce and topped with cheese).

    Tuna and sweetcorn cous cous... mic cous cous with lemon juice, rosemary, tuna and sweetcorn.

    tuna,sweetcorn, pasta and mayo always goes down well with the kids.

    Tinned tomatoes and tuna reduced down into a nice pasta sauce.

    Tuna Balls in tom sauce

    These are made a bit like fishcakes (tuna, breadcrumbs, parsley egg) and fried off then dropped into a homemade tomato sauce. Serve with rice or pasta.
