In need of 1001 things to do with tinned tuna !!

    Curried tuna quiche (without pastry - nice and light!)

    ingredients:
    4 eggs, separated
    juice of a (small) lemon
    1 large onion, minced
    1 clove garlic, crushed or minced
    100 ml semi-skimmed milk
    3 tbsp low-fat creme fraiche
    2 tbsp grated cheddar
    250g tinned tuna (in water or brine)
    2 tbsp corn starch
    1 tbsp olive oil
    1 tbsp curry powder
    salt & pepper

    Drain the tuna, flake with a fork in a bowl, add lemon juice, mix in the egg yolks. Beat the egg whites with a little salt until stiff. Heat the oil in a non-stick pan and soften the onion and garlic for a few minutes. Add onion mixture, curry and creme fraiche to the bowl with the tuna, combine well and season with salt & pepper. Stir the corn starch and cold milk together and add to the tuna mixture. Fold in the beaten egg whites, transfer to a tart tin (22 cm), bake in oven at 180° for about 30 mins. Also nice cold.

    ooh ace! hubby lives off the cheapy tuna from Mrs A - we actually prefer it to any other brand! will have to check out the recipies. great thread. :money: never thought they'd be so many things you could do with tuna besides 'tuna & pasta'! :)

    Tuna pate'

    Combine drained flaked tuna with soft white cheese, lemon juice and black pepper and a bit of softened butter. Mix thoroughly and chill for an hour or so. You can also add some finely chopped fresh parsley or chives.

    Eat on toast with thinly sliced cucumber or on it's own.

    Hello

    It's been a while since I posted and was wondering if anyone could give me some idea of what to cook for tea tonight for me and Mr Toxy? I have tuna in mind but don't want to cook a pasta bake as we are having pasta tomorrow. Sorry for the lazy post but work has been so manic I don't know whether I'm coming or going.

    This is what I have available
    Tuna, Tinned tomatoes, kidney beans, rice and noodles, herbs and spices, in pantry
    onion, garlic, cauliflower, swede, marrow, spuds, tomatoes, a leek inveg rack
    Olives, cheese, frozen peas, frozen sweetcorn in fridge freezer

    Thanks in advance am looking forward to some inspiration

    I have 8 tins of tuna.

    I don't know what to do with them. I'm not particularly keen on tuna mayo sandwiches or tuna pasta bake.

    i could do fish cakes but i don't think they'd really go?

    i don't want to moan but there seems to be a choice of tuna pasta bake, tuna mayo sandwiches or tuna pasta bake. (and a few others...)

    i might just have to get a taste for it again!
