We've nearly finished the last of our marmalade and I have some seville oranges in the freezer waiting until required.Problem is I have lost the recipe for making marmalade using the whole fruit method, ie everything gets cooked and then whizzed up apart from the pips.
Does anyone have a recipe for this way of making marmalade?
I've tried making it both ways and have to say i prefer this one more as it has a slight bitter tang to the jam,is slightly less sweet.
many thanks0 -

I heard that the seville oranges in Spain are grown entirely for the British marmalade market, its a uniquely British food.
I have adapted a Delia marmalade recipe that makes the dreaded cutting up much easier.
Delia's recipe is to simmer the whole fruit for 3 hours. When cool it is sooo easy to shred. I put the fruit in my slow cooker and left it for about five hours. I let it cool and then shredded it - taking out pips.
I used a can of mamade and added some slow cooked lemons and grapefruit as I like three fruit marmelade. I used the cooking liquid as well. It is very good. I have also used shrivelled tangerines and lemons that the slow cooking has converted into nice marmelade!
p.s. I've just read the 'proper' recipe for whole fruit marmalade. I did none of this, simply took the pips out of the fruit and used what was left! I also used the liquid to make up the quantity on the mamade tin. It is really lovely stuff and looks nice in the jar. If I was making it with all fresh fruit I would do exactly the same.0 -

I must confess to an even easier method than shredding the fruit,I cut the oranges in half, scoop out the pips and whizz everything up in the food processor, then add the mixture to the liquid!! Lovely.0 -
I've not used it myself but this says you can use it in the breadmaker and is wheat free
