It is very difficult to make gluten free bread as it is the gluten that gives bread its texture. As a coeliac I can only eat GF and have found the best bread to be dietary specials brown wholegrain which is about £1.98 for a tiny loaf from Tesco or Asda.

DOn;t forget that as well as wheat flour you cannot use any rye or other flours. Most gf bread is made from rice or potato flour. I tried a soya flour once but it ended up like a solid yellow biscuit that even the birds wouldn't eat.

I'm a coeliac too, bu have found the nicest flour to be Doves Farm, it's sold in Asda and Tesco and makes the difference, but I haven't however made bread with it, just cakes.

I have classical allergy to wheat - so can still eat gluten on other forms.

I wouldn't bother trying to replicate wheaty/gluteny foods. Just eat natural foods, rather than fake bread or biscuits made with odd ingredients which cost a bomb.

I just don't eat much bread now, you can make 'sandwiches' by wrapping ham/philly in lettuce leaf. never bothered with corn pasta etc, just have rice, or not as bothered about carbs anymore.

Stamp collection make some non wheat breads, the deli breads, esp the one with carroway are best IMO.

otherwise get pumperknickel - rye bread.

lots of yummy wheat free crackers available e.g. oatcakes (but read the ingredients), organic rye crackers etc. not too keen on the puffed rice cakes as they are high on the glycemic index.

Here's a few links that made it into my favourites for a gluten free diet.

This contains a recipe that does without a flour for breadmaking, just goes from grain to batter. Handy if you don't have any flour to use and lets you control the quality of the ingredients better.

From a book I just picked up from the library they mention using xanthan gum, apparently makes bread softer, less crumbly. (Gluten-free food, Lyndel Costain & Joanna Farrow ISBN 0 7537 1024 2 ; not an exceptional book, though nice pictures).

I have a lot of recipe books on gluten free cooking which I find very helpful. You can usually pick them up on ebay cheap.I became intolerant to most foods last year and being a vegetarian meant I have mostly had to starve. I find the glutten free pasta revolting.I have a great book called vegetarian without ( which is dairy, wheat and meat free). You can buy glutten free breadmixs from holland & barrett ( and i think tesco) but eventually i just went off the idea of eating bread !
Hopefully once companies find a demand for these products and realise people have intolerances it should be a lot easier to get things at a better price and even, eat out  - which is another major trial.

I use Glutafin bread mix in a bread maker, and it comes out OK. My parrot prefers it to normal bread! You can get it on prescription.

Other than that, I tend not to bother with bread. I normally eat rice cakes and things if I have to buy it. Although some Juvela bread rolls are quite nice.
