Thanks thriftlady-I got straight onto ebay and got Simone Seker's book for £1.70!

That's fantastic,I hope you like it.One of the best features is the suggestions for using each preserve, she has some really delicious sounding ideas, making each recipe really versatile.

I can recommend the Gingerette which is a spicy citrus drink that you drink hot on cold nights(with whisky if you like) just the job for nights like this. The method for Fruit Flavoured Spirits is one I use to make quince vodka and damson gin-highly recommended ;)

    Enjoy your book :)

... and where can I get Seville oranges? I can't get to a market and so far I haven't spotted seville oranges in either Tesco's or Asda. Has anyone seen them in any of the other major supermarkets?

Ahh I see. It seemed to be the first batch I put in jars that floated - the second lot was better. (I cooked both lots simultaneously so the second batch would have cooled more). I must admit my jars were very hot. My grandad taught me to have them really hot so the 'button' pops down.

They'll still pop if the marmalade is warm - I've recently had a cuboard cleanout and found a jar of 1998 chutney (mine) prepared in the same way - and it's absolutely gorgeous. :j What's most important is that the jars are sterile, it's fine to let them cool right down - the reason you don't use them cold is that the jars can crack.

Just wanted to add that I saw reported last year a lady who finding a jar of chutney she'd made in 1965, sent it off to a lab for testing, and it came back perfect for eating. (Reported on BBC news.) So I'm not totally off my head!!! If the seals not been broken, it looks perfect without any mould, smells good then I'd probably eat it. (Not been ill yet)

I've made 6 jars of marmalade ... can I go to bed now ;)

Not 100% sure it's actually set as it should ... but hey ... 1st time and all that. If it is a dismal failure, I have a good chocolate and orange cake recipe it can be used in! Here's to hoping, LOL!

  • well done Zed!

Tomorrow will reveal just how well it has set. Provided it was not overboiled in the first place runny marmalade can go back in the pan to boil onto a better set.......or just make sure you hold your toast dead level. Enjoy!!
