  • I read the recent marmalade thread with interest and am really keen to have a bash (I actually got given a jam pan as a wedding given). Anyway I've got good instructions but still need answers to a frew questions if you dont mind:
    - Where do I gwet muslim (or can I really just use new/clean tights?
    - can you reuse muslim (i.e. clean in washing machine) of is it a throw away item?
    - What are wax circles? Is that the same a greaseproof paper or is it a different sort? I am asuming to get cirle of right size you draw rounf the top of your jam jar! I have been given a pack of nice jar jar lids from Lakeland, but Delia seems to suggest I still need wax circles to seal the jars properly.
    - Asda dont sell Seville oranges! Can I use another kind, or do I need to seek them out (have an idea where to go, its just a bit inconvenient as it involves making a special journey).
    - Delia uses 2lb fruit and 4lb suger, but recipies of here are 2lb to 2lb - I would prefer to use lesser sugar recipies, but does this mean it's harder to make first time?

    I made Seville orange marmalde for the 1st time this year, in fact, I'm sitting here munching a piece of HM toast and marmalade as we speak! So, here's a few answers, but not all ....

    The word is "muslin" rather than "muslim", I bought mine from a fabric shop. However, I reckon you could easily use tights, as long they were not fish-net, LOL!

    You most certainly can, rinse it out and lob it in the washing machine.

    I think that they (Seville Oranges) are only available for a very short period, and I have a feeling that the season has finished. Other people will be able to advise you about different types or oranges / limes / etc etc.... :)

  • Thanks for this! I'll probably use tights but look out for some muslin in the long run!
    I just phoned the fruits / veg specialists near my work and yes I've just missed the Seville orange season. Problem is I only just started saving jars when the the thread came out and that that I have enough to make the marmalade I've missed the season!
    I travelled through all the pages of this thread again and someone else has suggested a three fruit marmalade using non seville oranges (grapefruit, 2 medium lemons and 1 large orange - whole fruit 2lb). So think I'll go for that.

  • If you're after the bitter orange taste of marmalade then yes, you really need Seville oranges.I really recommend the precut Seville oranges in tins .Ma Made is the brand,I can't remember how much it costs or makes but it's cheaper than buying marmalade.HTH

    Hi, I'm new on this board so please be gentle with me.

    We have just found out that our youngest Son, Finlay (19 mths) has Coeliac Disease, have the Biopsy in a week or so to confirm (he has had a positive Blood Test) and see the severity of it.
    I know we can get alot of the food for free on prescription, but we tried him with some of the bread last week and he wouldn't touch it.

    So I was thinking of getting a Breadmaker - the Panasonic SD253 and using the breadmix instead to see if he'll prefer it. Is it worth the money? Will I be able to make normal bread in it too? - obviously washed well to prevent Cross Contamination.

    I have done a search for Gluten and have got some great posts/ideas from you all.
    Any other Gluten Free food advice for someone so young? I have no problem with cooking as I was a chef for 15 yrs.

    A friend of mine has a son who is autistic and needs to have a gluten free diet. She bought a breadmaker to make gluten free bread for him and has no problems at all. She makes ordinary bread for herself too. I don't know all the ins and outs but she uses it a lot from what I hear.

    My stepdaughter's coeliac. She loves the Lakeland Easybakers GF bread mix which we did in the breadmachine, but I hated it - thought it smelled and tasted of putty. All GF bread I've tried has been pretty horrible, but the best has been the Glutafin? sliced white bread which she gets on prescription; toasted it's not too bad.
