    Seville oranges are rarely in the supermarkets at this time of year,( they are a seasonal product ) more usually in January /February. Although you could use other oranges the marmalade will be a lot sweeter ( seville oranges are bitter ) and you may need to add pectin to get it to set depending on which ones you use. You can of course make marmalade from most citrus fruits and a mixture of many, but it is rarely cost effective .
    You might find it easier if you want to make it for xmas to use "Mamade" and add whisky to it . if you are not familiar with this product, it is concentrate for making marmalade ( available in most supermarkets ) and comes in different variieties ( thick or thin cut ) and all of the time consuming chopping , boiling, sieving. etc is already done for you. I am pretty sure you could add whisky to it . It is pretty reasonable, gives a good result and might be a good way to start marmalade making.

    I've read a bit about marmalade kits (is that what you mean Carly?) - but we really don't mind doing all the hard work (we get to have a gossip and a bottle of wine while we do it!)

    Delia's recipe has 2 lemons in it. Do you think this will add the bitterness?
  • I can recommend Mamade too, it is just shredded Seville oranges and is a doddle to use. It's what I use when the supply of hm marm has dried up and it isn't January yet ;)

    yes lemons or grapefruit will add bitterness ( but may not be to everyones taste with added whisky.

    you can always use a kit and still have the wine and a gossip !

    I use Delia's marmalade recipe and can recommend it, lemons and all.

    Now I've got my jars I'm going to make some marmalade tomorrow using Ma Made. Was wondering if I could add things to some of the jars to alter flavours and whether anyone has tried this eg whiskey , ginger

  • Yep done both of those - add it to the marmalade when you put it into the jars and it is fine. Just don't go overboard on the whisky or it can be a bit runny.

    just added a few drops of whiskey to a jar and it tastes amazingly strong of whisky and it was only a few drops!!! HONEST
