you can get almond flour in most supermarkets .. look where the cake making stuff is... for the bran flour i grind up all bran or porridge oats and same for the flaxmeal.. i grind up linseed

Hi everyone
Has anyone got a recipe for gluten free bread? I do not have a breadmaker.
OH has a few dietry problems and has decided to give up wheat bread but needs to take packed lunch and GF bread is very expensive - can enyone help?

I've found this one in a cookbook I have. No idea what it will taste like (Buckwheat pancakes are lovely though - but recipe I have mixes buckwheat with normal flour)
Rice Buckwheat and Corn Bread
200 ml tepid semi skimmed milk
200 ml tepid water
350g brown rice flour
50 g buckwhear flour or soya flour
50 g gluten free cornmeal
5ml caster sugar
5ml salt
7g easy blend dried yeast
40g soft marg
1 medium egg beaten, plus extra for glazing
2 tsp sesame seeds
1. Lightly grease 2lb loaf tin. Mix water and milk together in measuring jug
2.Place rice flour, buckwheat or soya flour, cornmeal, sugar and salt in a bowl and stir in dried yeast. Mix well then rub in marg. until mixture resembles breadcrumbs.
3. Add milk and water, and egg, beat together until smooth consistency.
4. Spoon mixture into tin. Cover and leave in a warm place until it has risen to the top of the tin.
5. Preheat oven to Gas5, 200C/400F. Brush top of bread with a little egg, sprinkle with sesame seeds. Bake for 30 min until lightly browned. Run knife around edge to loosen loaf.
6. Turn bread onto rack and allow to cool. To store wrap loaf in plastic bag or in foil.

Cheese and onion Cornbread
15ml/1 tablespoon sunflower oil
1 onion thinly sliced
175g/6oz gluten free cornmeal
75gr/3oz rice flour
25g/1oz soya flour
15ml /1 tblspoon gluten free baking powder
5ml/1 tspoon of caster sugar
1 teaspoon salt (personally I would use less than this)
1 cup coarsely grated cheddar cheese
200ml/70z tepid milk
2 eggs
40g/11/2 oz of soft melted marg
1. Preheat oven to 190C/375F/Gas 5. Lightly grease a 900g/2lb loaf tin
Heat oil in frying pan - add onion and cook gently for 10-15 min. Remove from heat and set aside to cool
2. Place cornmeal rice flour, soya flour, baking powder, sugar and salt in a bowl and combine thoroughly. Stir in cheese mixing well
3. Beat together milk and eggs and melted marg. Add to flour mixture and beat well.
4. Stir in cooked onions and mix again
5. Spoon onion mixture into the prepared tin, level the surface and bake for about 30 min until bread has risen and is golden brown.
6. Run knife around edge to loosen loaf. Turn onto a wire rack to cool slightly and serve warm.0 -
I've got a gluten free pizza recipe, which, whilst not quite relevant, is rather delicious!
It uses a variety of flours, but they're not that expensive if you go to the smaller more indepentant type health food shops. It's about £6 for all of them, but you get large bags so can make another one later!
Ingredients
1/2 teasp Dried Yeast Granules
240ml/8fl.oz. Warm Water
1 teasp Sugar
100g/4oz Rice Flour
75g/3oz Cornflour
1 tbsp Potato Flour
1 1/2 tbsp Olive Oil
1 teasp Salt
Extra oil for greasing
1. In a small bowl, dissolve the yeast in half of the warm water, add sugar and mix well. Set aside for 15 minutes.
2. Preheat the oven to 220C, 425F, Gas Mark 7 and lightly oil a large pizza pan. Prepare the toppings for the pizza.
3. Place the remaining dry ingredients in a large mixing bowl, add the yeast mixture and mix well, adding the remaining water a little at a time until it is the consistency of a very thick batter.
4. Pour the dough into the centre of the prepared pizza pan and spread around evenly. Bake at the top of the oven for 5 minutes until lightly set.
5. Remove from the oven and reduce the oven temperature to 190C, 375F, Gas Mark 5.
6. Add the toppings of your choice to the pizza. Return to the oven and continue to bake for a further 15-20 minutes.Murphy's No More Pies Club #209

today I tried the Gluton free bread mix from lakeland.........It tasted a bit strange,the worst bit was the smell when you are eating it, it smelt like putty you put around windows......very strange.......... maybe its just personal taste, some one else will think it is really nice.0

Hi all
I could really do with some advice from all you old stylers....
Does anyone have a recipe for wheat free bread as I am not supposed to eat wheat but am really longing for a nice fluffy sandwich. I have tried messing with some flours etc but so far just end up with lumps of foul concrete. I haven't got a breadmaker and cant really afford/justify one until I can get a recipe that is tasty.
Please help me before I jump into the bread bin and devour every last crumb..... :rolleyes:Trying to tidy and clean while the kids are still growing, is like trying to clear snow even though it's still snowing
