    I love tortilla wraps - there's all sorts of things you can do with them. :)

    For a hot meaty filling I'd go for something fajita-like - stir fry the chicken, cut into strips, with some of your veggies (from your list I think I'd go for pepper, onion or spring onion, courgette and perhaps some carrots if you cut them very thin), add some spices if you've got any, and roll it all up in the wraps with a blob of salsa. You can do a veggie version by simply leaving out the chicken and sprinkling over some grated cheese before rolling up.

    You can also do burritos - thick chilli con carne or spicy bean stew, wrapped in tortillas; lay the rolled tortillas in a baking dish and top with a tomatoey sauce and some grated cheese then bake until bubbly and golden (utterly :drool:). Quesadillas are good, too - fold a tortilla wrap in half, fill it with grated cheese and just about anything else you fancy, and pan fry for a minute or so on each side until the cheese melts.

    You can eat them cold for lunch with just about any filling you can think of - just don't go too mad on the filling as it can get a bit messy to eat!

    I make fajitas quite a lot. You can use chicken breasts, cut into pieces but I usually use leftover chicken from a roast. I stirfry 2 onions, a red peper, a yellow pepper & 2 cloves of garlic until softening then add the chicken & about a level tblspn of fajita spice mix (one sachet is enough to make this dish about 3 times). While that's cooking, I make a salsa from 2 skinned chopped tomatoes, a chopped spring onion, 1 tblspn olive oil, juice of 1 lime, 2 tblspns chopped coriander (easy to grow on warm windowsill in summer), salt & pepper & a crushed clove garlic. To serve, spread the tortilla with a little of the salsa, load on the spicy chicken & veg mix & roll up. To stretch it if you don't have that much chicken left, add a tin of drained kidney beans. If you want a veggie version, use the kidney beans & leave out the chicken. Can't take the credit for the recipe, it's one of Patrick Holford's. I've adapted it depending on what I've got in. It works with prawns, left over beef & I've also included avocado when I roll them up, & also left over sour cream dip. Hope this is helpful. I make these regularly & partner always says can we have them again.

    The burritos and que (can't spell it lol) sound good, never heard of them before, will let u know how i get on :) just hope doesn't fall to pieces lol x

    Glad you liked it! I find the fajitas are useful when you've got people round for a meal but group includes children or picky eaters, as you can provide bowls of lots of different things & a plate of warmed tortilla wraps & everyone can just create their own fillings & roll their own. Just provide a big salad with it & drinks, & that's a nice informal evening sorted!

    for anyone who likes fajitas, here's a recipe for making your own spice mix, it makes the equivalent of one of the sachets you buy, but costs around 5p, or even less if you buy your spices from an Asian grocer :)
    I make up a big batch & keep it in an airtight container so I always have some ready, 3 Tablespoons = 1 sachet


    Fajita Seasoning


    1 Tablespoon cornflour or cornmeal/polenta
    1/4 - 2 teaspoons chilli powder to taste, I use just 1/2
    1 teaspoon salt
    1 teaspoon paprika (half smoked & half plain gives an interesting variation)
    1 teaspoon sugar
    ¾ teaspoon crushed chicken stock cube or bullion powder
    ½ teaspoon onion powder
    ¼ teaspoon garlic powder
    ¼ teaspoon ground cumin

    Mix & use as packet directions

    Tortilla wraps freeze perfectly well, you can take them out individually and give them a minute in the microwave to thaw. I buy them when they're 'woopsied' down to almost free.
    A kind word lasts a minute, a skelped erse is sair for a day.

  • I often make Quesadillas, my boys really like them as an alternative toasted sandwich type thing. Last night though I thought I'd try and make one of those 'star wrap' things for DS2 I've seen advertised on the telly - think it's KFC. I put in some cooked southern fried chicken goujons, some chopped cooked bacon, grated cheese, salsa and mayonnaise, folded it up into a parcel - couldn't manage a star, I reckon they have special shaped wraps for that, mine was and oblong, and bunged it in my George to melt the cheese and go toasted. He said it was nice anyway.
