    enchilladas... mmmm. Make as a fajita place on a baking tray seam side down (to prevent unwrapping). Smear with a tomato sauce (like a pizza topping sauce) and sprinkle with cheese and bung in the oven for about 15 mins. YumYum. Serve with salad, sour cream, salsa, guacamole, etc

    mm trixietoes that sounds lush, i was thinking earlier about putting my favorite pizza ingredients in one.

    Thanks for all the help, they were a big success! Unfortunately my toddler knocked his whole plate off the table by accident so he didn't get to try it! In the end i stir fried red onion brocolli carrot pepper in veg stock and coated chicken pieces in olive oil, paprika and chilli powder, then put some salsa in wrap and ingredients with some grated cheese. Have done them one for school tomorrow with the chicken in as well. I had the same but minus the chicken, in fact it was so yummy i had two of them and messed up my weightwatchers for the day - but it was worth it!

    My favourite enchiladas:
    Stir fry onions, peppers, garlic and some chicken breast pieces. Add 1 tin of tomatoes & some fajita spice mix to taste. Cook for about half an hour until reduced. Put a bit of filling, some sour cream and grated cheese in a tortilla and wrap it around. I usually make about 4 - 6 of these so that they fit snugly next to eachother in a baking dish. Top with more blobs of sour cream & grated cheese. Bake for 20 mins. Delicious and Sort of like a mexican lasagne. They're really nice (maybe even nicer) cold, actually!

    You can also make a cheap, veggie version of these by replacing the chicken with mixed beans (boiled or tinned ones) eg borlotti, pinto, chickpeas...

    I buy these wraps regularly now as a change from sandwiches for grand-daughter`s packed lunches for school. She LOVES tuna mayo filling with any of these that are handy - sweetcorn, chopped tomato, celery, cucumber, mange-tout, lettuce hearts.

    My first attempt at using tortilla wraps is a family legend.... Caravan holiday, late season, quiet break, 3 adults, 2 dogs...I served up a supper of wraps, chopped hot dog sausage, spicy dip from a jar and some salady bits. It was tasty, but we weren`t much used to wrapping/folding the things, and a bit of sausage escaped under the table. Thought I`d get it later, after we`d finished, but forgot by then. Later that night, the table was part of the bed-base, and we were woken in the middle of the night by something we thought might be earth tremors! It was in fact one fat dog who`d smelled the bit of sausage and gone after it but she couldn`t get out from under the bed....my late Hubby had to get out of bed and kneel down and pull her out from under by her hind legs, tried to do this in the dark not to disturb our friend. We couldn`t do this without laughing, which alerted the other dog, a huge long-haired mutt with a tail like an alligator, that FUN was happening, so HE started wagging that Tail - which unfortunately kept smacking against the very tinny front of the heater, nearer the back of the caravan beside the single bunk where our companion was fast asleep.
    It was like the sound of the Rank Organisation Big Gong. By this time, Hubby and I were helplessly giggling like loons, that made both dogs very happy and even more tail-waggy, and our companion woke up doing a Basil Fawlty, and that made us MORE helpless and the dogs even more waggy.... we put the lights on, had some coffee and calmed the mutts, but the next day we got strange looks from the folks in the caravans nearby. Never went back to that site!

    I usually make my own and use them for fajitas, however I just received an order from Appr*ved food, and I got 10 packs of them cheaper than I could make them for.
    So, with a freezer full, what else could I use them for?
    I should say we are veggie, any ideas welcome

    Quesidilla's always go down well in my house
    Burritos made with quorn mince
    enchiladas made with fake chicken

    chop into triangles and deep fry to make nachos
  • I make 2 kind of veggies fajitas, one with chopped veg cooked with spices, and the other one I do is just a veggie chilli (cooked til most liquid has gone) with cheese/sourcream/lettuce.

    You can also make burritos with them.

    Use instead of bread for sandwiches.

    You can make tortila crisps with them, cut into wedge shapes and add some oil/flavours.

    Or make quesidillas - place one wrap in frying pan, add veg like toms/peppers etc, cheese, top with 2nd wrap. cook one side til brown, then flip over (I use plate to help!), cook otherside, serve with sour cream etc.

    Or failing that send them to me!! :rotfl: But they keep for ages in freezer anyway

    veggie curry
    savoury rice with yoghurt and mint
    grated cheese, grated carrot and mayo
    Quesadillas - cover one wrap with grated cheese, pop another on top and cook in dry frying pan turning once - lovely with salsa

    you can cut them into triangles and make your own tortilla chips - either deep fry or toast in the oven.
    I vaguely remember seeing a recipe on tv in which they were used in a lasagna type dish instead of pasta sheets - sure that would work nicely!
  • You can make healthy pizzas with them. Just toast lightly before you add your toppings so they stay kind of crisp. Yummy!
