    Yesss - was racking my poor brain as to where I had seen it! Nigella Express on foodnetwork! :T
  • Ooooh I just bought some from AP, too & I love to make mexican lasagna with it! Seriously YUM!
  • I've used tortillas as if they were lasagne pasta, very nice! Or as if they were pancakes, with spinach/ricotta/tomato filling.

    I'm also fond of using grilled halloumi cheese with roasted vegetables, seasoned with Mexican spices.

    oohhh! one of my fave things to do with then is get an oven proof dish spray a bit of oil over the outside and lay the tortilla over it. place in a hot ish oven for 1-2 mins then remove from bowl and hey presto you have an edible bowl!! Next step is to fill. I normally do this with salad and the dressing makes the crunchy tortilla really tasty. you can also fill with chilli etc.

  • i put things like cheese n ham in them n toast them like a toastie you can use a variety of fillings whatever you fancy x

    Not at all!, I use the recipe from River Cottage Everyday

    250g plain flour
    1 tsp table salt
    1 tablespoon oil
    150ml warm water

    Salt and flour in together, add the oil to the water, mix together to make a sticky dough. Cover and rest for 15 mins.
    Roll into a sausage shape, cut into 8 pieces. Roll out to a round 2/3mm thick, use plenty of flour on work surface
    Then into hot dry frying pan/griddle for about a minute first side, then turn over for about 30-45 secs

    Easy, and really cheap. I use value flour, so they work out as pennies:j

    I buy them to make wraps for the kid's lunchboxes. I found a clip on Youtube showing how to fold them properly, and it was revolutionary in our house! :rotfl:

    I spread them with houmous, and put grated carrot, cheese, bits of red pepper in them and wrap them up (it doesn't fall out now I nkow how to do it properly).

    Quesadillas are also nice - put a tortilla in a pan, cover it with cheese spring onion, tomato, stick another tortilla on the top and heat it up to melt the cheese and cook the other ingredients, then flip it over to toast the other side. I guess using fat in the pan is bound to make it taste better, but I have done these without to make them healthier. They have cheese in anyway so that stop them being too boring.

    I'm going to try the homemade ones - I'm determined to cut down the cost of the kid's lunchboxes, and tortilla wraps can be a bit hit and miss on the foldability side. Some are a bit too dry to fold in at the ends. If I make them fresh they might be more pliable?
