ohh i love tortillas, but when i have them i just make tonnes of fajitas with any odd bits of meat/veg i have kicking about the fridge!! Yum!!!Moneysavinghopeful :rotfl:0

(From Book2, Cooking with Conscience by Michelle Trute - an Australian title, remember that capsicum=pepper)
1 cup red capsicum, chopped
3/4 cup green capsicum, chopped
1/2 cup onion, chopped
2 Tbs fresh coriander, chopped
1 tsp chilli, to taste
1 tsp oregano
1/2 tsp cumin
2 cups tomato juice [I used to use V8, but they changed the recipe]
640g can mixed beans
1 cup reduced fat cheddar cheese
7 corn tortillas
1. Heat oil in a large non-stick pan. Add red capsicum and next 6 ingredients. Saute for 5 minutes or until tender. Add tomato juice and cook 8 minutes or until reduced to two and a half cups.
2. Combine drained beans and tomato juice mixture in bown, stir well. Set both aside.
3. Line a 22cm pie plate with foil, allowing 15cm of foil to extend over opposite edges of the pie plate. Repeat procedure with another piece of foil, extending over remaining edges of pie plate.
4. Coat foil with cooking spray and place 1 tortilla in bottom of dish. Spread 1 cup of bean mixture over tortilla. Sprinkle with an eighth of the grated cheese. Gently press one tortilla over the cheese.
5. Repeat layers, ending with the remaining bean mixture and cheese. [I add a little grated parmesan to top layer to help it melt] Bring edges of foil to centre and fold to seal.
6. Bake at 180 degrees C for 40 minutes. Remove from oven and let stand, covered for 10 minutes. Remove foil packet from dish, unwrap stack and slide onto a serving plate.

There is another carnivorous version in a different book I'll look up a bit later. My Mum is diabetic and has sent me loads of low GI books from Oz in a bid to get me to learn to cook before she arrives at Xmas. I usually use either chilli or spice up bolognese to make them. SO then I can do batch cook of either and use for variety of things. We're another family who enjoy mexican food weekly. Enchillads are nice too which is where you do the mince in a tomato based sauce (spiced up) with a little cheese mixed in, then put inside tortillas in an oven dish, cover with some more of the tomato sauce and top with cheese then bake in oven for 20-30 mins. Yummy! Can serve alone (we tend to as it's filling) or with salad, wedges, rice etc etc. I usualy use corn tortillas for Enchilladas but have used other flour ones before, they just seem to cook quicker.One day I might be more organised...........

Help!!
About two weeks ago I followed a link from somewhere on here to a site which was called something like 'the househusband cook' (???). anyway, he had a recipe for a layered tortilla wrap kind of sloppy pie.
It sounded delicious so I copied the recipe but have promptly lost the thing. I have just spent an hour or so on here sifting thru the recipe lists, hoping to find it but no luck.
So - my final hope is to ask if any of you remember this recipe or website and can help me? I just have it stuck in my head that I want to cook it tonight and though I can persuade myself to cook something else, I am sure we all know what it's like when we have the taste for a certain something in our mouths... (even if it is usually chocolate!)

I have bought a pack of these,they seem nice and floury and have quite a long shelf life,but if i put ,say,tuna or cream cheese,how do I fold them? It seems quite daunting,any other suggestions for fillings?0
