Does anyone have a recipe for a simple sausage casserole I can make in the SC?

    heres one that was in the recipe book that came with my slow cooker

    sausage pot

    2tbsp oil
    750g sausage (or substitute veggie sausage)
    1 large onion chopped
    3 carrots thinly sliced
    2 leeks sliced
    3 tbsp flour
    400ml beef stock (or veg stock)
    3 tbsp chutney
    s&p

    also says 2tbsp worcester sauce but can leave this out if you are vegetarian

    quickly brown sausage on all sides in oil in pan, add onions carrots & leeks & gently saute until softened but not browned. stir in flour & cook until oil is absorbed. slowly add stock & bring to boil stirring until thickened. stir in chutney & seasoning. put in sc cover & cook for 5-8 hours.

    Can someone please clarify which/what chutney would be best, if I am totally honest I don't really know what chutney is:confused: .off to google it.

  • Help!

    I have three packs of sausages that I need to use up. I'm looking for a way to cook them in my slow cooker. A hearty casserole with nice veg is what I'm thinking of. Any ideas?

    We did this the other night - no oven/hob at the mo!

    Sausages
    tin of tomatoes
    carrots chopped up
    onion

    Worked well, but I'd suggest browning the sausages in a frying pan before putting them in the cooker

  • Lidls do a lovely sachet mix at 19p I think. I add sometimes to:

    6-8 sausages (cooked for 3-4 mins)
    1 Tin Baked Beans
    Onion (lightly fried in butter)
    Mixed frozen veg

    All placed in SC with sachet made up and cook for 4-6hrs. Serve with Baked Spuds or rice.

    2 tsp paprika and a pinch of chilli powder
    1 tbls tomato puree
    salt+pepper
    yum yum
    serve with rice or mash

    Hi, just thought I'd add my dads sausage casserole recipe which always goes down well at our house. He usually does it in a massive pot in the oven but you can just throw all the ingredients in to your taste as I have done it in my slow cooker before and came out lovely. Can be left on low all day really, my dad says the longer and slower its cooked, the better it tastes.

    Pork sausages (We usually use Tescos frozen)
    Leeks (thick slices)
    Shallots (Peeled and left whole)
    garlic (to your taste)
    potatoes chopped 6
    Red peppers sliced
    dried herbs (to your taste)
    Black pepper (to your taste)
    Carrots (thick slices)
    Tin of garden peas
    Bisto original flavour.

    Basically just chop all your veg and through in the herbs etc and the peas including the juice. Brown the sausages and cut them into three and add them to the pot Then make up a big jug of gravy (not too thick) and pour enough over to just cover everything. Give it a good stir and stick it on low in SC all day. If you want to do it in oven put it on gas mark three as early as possible.

    Extra veg can be added if liked we've used sweet potato, swede, broccoli, any frozen veg buts you have left and even spinach. The spinach is a good thing to add if you have kids that won't eat it as you can really taste it but its still really good for you.

    Serve with lots of bread.

  • Thanks for all the advice. My sausage casserole is now simmering away!

    Here is what i did, it's rather mammoth. My 6.5 ltr pot is full to the brim.

    Ok, I used three and a half packs of sausages. Thats 21 sausages in total!!!

    I chucked them in a two frying pans with some oil. Added to that was 5 onions chopped and 4 leeks chopped. I then chopped 6 cloves of garlic and loads of fresh chili and chucked that in the frying pan. I also added 4 tablespoons of flour to the pan and added to cups of water.

    After a bit I transfered the lot to the slow cooker.

    I then raided my fridge and added 4 sliced carrots, 2 red and two green peppers (sliced) and two handfuls of chopped mushrooms.

    I then poured in 2 cans of baked beans and chopped up about 10 tomatoes and added that to.

    Finally I added three oxo cubes to a pint of water and chucked that in. I then added salt and pepper and mixed herbs.

    Finally I struggled to mix it all as the pot was full and it's now cooking on low!

    I will let you know how I get on.

    I found this thread while I was searching for a sausage casserole recipe.

    My lil bro decided to defrost the (cheap, nasty, given) sausages in my freezer for his lunch, and then not bother eating them...

    So I have 8 sausages of dubious origin to use in an OS fashion. Have any of you skilled OSers got a recipe to mask them? or even just a hint for preparation before I add them to an existing recipe to make them taste nice?

    (oh, I'd probably want to freeze the result, as I'd kinda planned my meals for this week...)
