i want to make a sausage stew in my slow cooker, the sausages were previously frozen but bought fresh
so when i cook them can i re freeze them??
and also whats the best way to go about cooking them do i need to grill them first or just stick them in the slow cooker??
also finally does anyone have a good recipe ;D
thanks
Hi stokefan,
Yes you can re-freeze them once they've been cooked. I always grill them first to brown them as it help with the flavour and the look of the sausages.
There's an earlier thread with lots of recipes for sausages in the slow cooker so I'll add your thread to it to keep the suggestions together.

Probably a suggestion here that will get me drummed out of the Brownies but...
I'm not so keen on heavily tomato based sauces. After many attempts to make a nice sausage casserole from scratch, I always come back to this. Packet sausage casserole mix (39p Lidl) made up with red wine or cider and some stock - not just water. Mushrooms plus any other fresh veg and herbs knocking around. I always put a lot of peppers in to brighten it up - generally for long cook casseroles I'll just use frozen or jar peppers. Lidl (again) do a big jar of whole red peppers. I would usually put these in towards the end of the cooking so they don't break down too much.
Sometimes I brown, sometimes I don't depends on how much time I have. It's more to do with sausages looking a bit miserable unbrowned rather than the taste!0 -

I havent read all this thread so hope no-one else has posted this recipe (if you can call it that!)
MY CHEATING SAUSAGE CASSEROLE
8 sausages - quickly browned under grill - it looks better.
tin of chopped tomatoes with herbs (or without herbs doesnt matter)
tin of baked beans
tin of butter beans (optional)
tip all ingredients into casserole and give a quick stir - either slow cook or cook in moderate oven gas 4 for about three quarters of an hour. or - and i HAVE done this - blitz in microwave on high for ten minutes. but make sure the sausages were almost cooked first!0 -

Hello,
I made this in the sc yesterday for the first time and had it with mashed potatoe. OH really enjoyed it. You could alter it slightly to suit what ingredients you have....
sausage pot
2tbsp oil
750g sausage (or substitute veggie sausage)
1 large onion chopped
3 carrots thinly sliced
2 leeks sliced
3 tbsp flour
400ml beef stock (or veg stock)
3 tbsp chutney
s&p
also says 2tbsp worcester sauce but can leave this out if you are vegetarian
quickly brown sausage on all sides in oil in pan, add onions carrots & leeks & gently saute until softened but not browned. stir in flour & cook until oil is absorbed. slowly add stock & bring to boil stirring until thickened. stir in chutney & seasoning. put in sc cover & cook for 5-8 hours.0 -
I usually do sausages, tomatoes (tinned or fresh), carrot & pepper & either potato in with it or serve with rice. I dont usually pre cook anything.0

I wouldn't even bother with the SC to be honest. Brown the sausages and cut into 1/4s, brown some onions cut into big chunks, add some chunks of potato (1/2 or 1/4s), put the sausages back in with enough water to almost cover, some Worcester sauce or HP, salt and pepper, simmer gently for 30 mins till the spuds are starting to break down a little. Hey presto sausage stovies, one of my family's favourites.
I suppose you could do it in the SC of course but it's so quick on the hob I wouldn't bother.Val.0 -
Thanks everyone ive just browned the sausage and bunged it all in blondy24 your way sounded good might try that next time! do think by the time i have done all that tho i coauld have just cooked it in the pan tho - valk_scot it is prob better in the pan but im going out later and dont fancy making it later on and the sausages should really be used today so hey ho its in i am debating if i should add some tomatoes or not - dont really think i need them but my nan's always had tomatoes in!Living the simple life0
