Might be a good idea to send Special Delivery or at least Recorded, as suggested.

You can then get an electronic signature from the Royal Mail website, as proof of delivery

I got confused with this too.
But the 1st bill you received, the one in November (even before you've used you phone) is classed as No1.
It worked out for me when I claimed the £50 chequeback and had to send the 1st & 3rd bill.
Still waiting to receive my 1st cashback which I sent off 3 weeks ago.
Will report back when it comes.
