    My day was full of sunshine but I couldn't get out into the garden so feel a bit frustrated. Did some baking though, so we have custard cookies and bread again in the house!

    I know there is another delicious recipe around these boards somewhere, and they are both very similar, but this is the one I make.

    4 oz. butter
    3 oz. sugar
    5 oz. SR flour
    3 oz. custard powder

    1 egg
    • Cream the butter and sugar together
    • Add the egg and beat
    • Finally add sifted flour and custard powder and mix to a stiff dough.
    • Make small balls and put on a greased baking tray, pressing down with a fork to make ridges and flatten the cookies.
    • Cook in moderate oven (about 180 degrees) for 12-18 minutes or until lightly golden.
    • Let them cool on the tray for a while before moving.
