    Hooray, my favourite subject - packed lunches!

    Sandwiches made with spinach/flax bread (basically spinach/ground flax mixed with egg and baking soda, then baked for 15 mins) - fill with meat/fish/cream cheese etc

    Wraps made with thin "pancake" (egg, milk, optional ground flax) - fill with anything chunkier

    Romaine lettuce leaves utilised as a "wrap" with fillings.

    Salads - caesar salad with almonds instead of croutons (or omit them entirely for Atkins induction). Or Greek salad with olives and feta. Or pretty much any other salad you can think of.

    Stuffed vine leaves - stuffed with mincemeat (or soya mince) instead of rice

    Boiled eggs, egg mayonnaise or devillied eggs

    Sausages

    Homemade soups

    Thanks, def gonna try the flax bread everyones been raving about, be great for work as this is the most awkward time for me, needing something to keep going til next break as cant nip off for snack.

    Trouble is tho, Ive got low potassium and had bit of heart scare due to this so really need dried apricots or bananas or something else not good for low carb.
    And no good going to doc for any such advice as we all know
  • So on the Dr D's low carb plan are smoothies allowed (ie fruit whizzed with full cream milk/yogurt and ice)? I'm not very good with eating breakfast - it's usually an english muffin/toast/cereal. Is tea/coffee allowed?

    sw start date 23/09/2013 4 st 8 pounds to go....as of 21/10/13 not 3 stone 7 to go for first target. updated 18/11/13 now 2 stone 10lbs to go to first target.

    Smoothies - nooooooooo to pure fruit ones, which contain far too much fructose, but yeeeessss to protein shakes in the morning!

    Pancakes - pretty, I'm going to a pancake party next Tuesday so I'm interested in this too. My plan is to experiment with a mix of ground almond and ground flax, with the usual eggs, butter and soya milk...

    aww badger big hugs its always worse when u feel bored, ujust want to snack on stuff, cant u do something to keep u busy ANYTHING???

    u can have almond flour on atkins when u have finished induction but not fruit i am afraid...mazzers if u want to do atkins cant u take a potassium supplement? sorry not really up on this ted may be able to help

    lemonade there is no need to get bored if u look at some of the recipes on here and on other atkins sites u realise just what u CAN eat and after that rotten boring old rice and potatoes seem pointless lol

    umm gravity not too bad??? are u insane u could not of got much worse!!!

    Cooooorrr! Sounds lush :grin: I have to confess I've been dreaming about pancakes every since I recieved the party invite on Monday!

    duuuh forgot the recipe lol .. here it is
    • 1 cup almond flour
    • 2 eggs
    • 1/4 cup water (for puffier pancakes, you can use sparkling water)
    • 2 T oil
    • 1/4 teaspoon salt
    • 1 T sweetener
    Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

    those will be like a thicker american pancake but for the more english version try this

    2oz cream cheese
    2 eggs
    1 tsp vanilla extract
    1 tblsp cream

    mix and cook as per normal pancakes
