for a lovely lunch, cube 150g of feta cheese, and gently saute a small red onion. add some dried herbs to the egg mixture, and assemble as above (without the grated cheese). bake for a lovely feta and onion muffin, which is divine hot or cold with a big green salad and a drizzle of olive oil.
both recipes have 2 muffins as a portion. i guess you could use a bigger pan and make a bigger version, but make sure whatever you ise is silicon because it sticks otherwise!
Thank you so much for this. I did them yesterday and had a few hitches - I burned the sausages a bit, then I didn't have enough room in the silicon pan so used paper cases in a regular muffin tin for the rest (mmm papery eggs) then ran out of sausages so shoved a few blueberries in the last one. Despite the glitches they are fab - even OH said yum and he usually curls his lip at my LC experiments. Must say blueberries with the peppered mix was interestingbut the theory seemed to work although the berries did all sink.
I was planning on oopsies as well but no cream of tartar in the house so that will have to wait.

The skirt sounds lovely. I am sticking to neutral colours at the moment as I have three skirts in my wardrobe that are a little tight still - a few weeks ago, they would not zip up at all! One of them is a pale pink linen that I would love to wear as long as I do not resemble a sausage bursting out of its skin!!!!
I have not dared weigh myself and will wait till I feel the result will not drive me to high carb rubbish as either a consolation or a reward!
Have had a bacon omelette for breakfast and really enjoyed it. Also have low carb fish and burger in freezer if I decide not to go shopping.
Fresh milk loaf is in the Panasonic for the rest of the family and I have not eaten bread for 2 weeks now, even my own!
DH was amazed when I tell him I have not been tempted by bread, cakes, biscuits, crisps, even chocolate."This site is addictive!"

Gawd, coming in to work this morning, the london underground was like a sauna:rolleyes: However, I am not going to complain about the nice weather when it's so grey and gloomy for so much of the year.
I'm still sleeping better and feeling more energised - have lost 9 pounds now which is great too - I probably could have lost weight quicker if I'd done strict Atkins, but I'm happy with making long-term health changes that don't make me feel deprived and which, as a side-benefit mean I lose weight too, if that makes any sense?!
Have got ham salad with me for lunch and probably leftover steak and roasted veggies for dinner.
HanSpan - thanks for posting, I always love reading when people try out the recipes and tips that get posted! It's very inspiring - I must give those muffins a go myself!

I'm very impressed that you're able to make bread and not be tempted to it eat. I used to make all my own bread and I've not trusted myself yet to make any and not eat it! I've not been remotely tempted by shop-bought bread - but then I only really ate my own bread anyway. Maybe in the longer term I can experiment with low carb versions... in the meantime the microwave flax bread gives me enough of a bread fix.
I'm sure I've said on here before I am the world's number 1 crisp addict, but I genuinely haven't been even tempted once in 5 weeks. In the first two weeks i had a square or two of 70% dark chocolate (which Dr Dahlqvist allows) - but since then the thought hasn't even crossed my mind!
Stranger things have happened, but not many!:D

Have just had a shower, washed my hair, and tried on the pink linen skirt that I could not zip up a few weeks ago - it is a bit snug but wearable.
Told DH how pleased I was that I could now do up the zip!
What did I get "Well done!" "Good!" or even "keep it up!"
I got "you never told me that, I would think you would be ashamed to admit a size 18 would not do up!!!!
Managed to reply with dignity "Why would I want to tell you that?"
"It is that kind of comment that makes people fly to the biscuit tin!"
From now on I have no intention of telling him anything!!! He can go and "multiply!"
When I lose weight it will be for me and I do not give a stuff what he thinks anymore!!!
I am not going to shove carbs down my throat because of his ignorant and frankly hostile comments!

oh elona.. what a twit he is, men open mouth put in foot then wonder why we are peeved with them!!!!.. u are doing fantastic to get the skirt done up that was tight so blaaah to him, as u say dont talk to him about it anymore, i never used to speak to my parents about losing weight for similar reasons, then when i had lost over 4stone they suddenly said oh did u lose weight .. umm yeah!!!
