    Oh boy where do we start was she a very skinney dietician my sons ex was one she was 5ft 7 and weighed about 7 stone she used to eat all the crap going i told her one day i thought someone would hit her read all the treads on here choose a plan and stick with it Good luck we are all here for you:j

    Hi all!

    Well pleased with myself! Went out last night and discovered that Lime Soda is a reasonable replacement for Strongbow (well, with a couple of double voddies anyway) :D

    Walked an unreasonable amount this am and felt good!

    I have low carbed before but what kept me off the wagon was cake. I love cake. Now that's not as big a bind as I have found the best and it's low carb! Yipeee! imagine my glee. :D

    It's from the cake and biscuit diet (think that's right) website and I love it.
    The Bakewell Tart. will put it up here in a min when I find it.

    Here we go

    Bakewell Tart the low carb way :D

    Ingredients:
    • Pastry:
      • 150g finely ground almonds
      • 35g butter
      • 1 small egg white
    • Filling:
      • 50g finely ground almonds
      • 3 large eggs, separated
      • 100ml raspberry puree
      • almond essence
      • sweetener ( I used 2 flatish tbls splenda)
    • a few flaked almonds for decoration
    First you need to make a pastry case and pre-bake it. Mix 150g ground almonds with the butter and one egg white. It makes quite a sticky mixture and can be difficult to roll out, so just press the mixture onto the base and sides of an 8" round baking tin. Pre-bake for 10 minutes at 175°C.
    Spread the raspberry pur!e on the bottom of the pastry case.
    For the filling, mix the egg yolks, ground almonds, almond essence and sweetener together. Whisk the egg whites in a clean glass bowl until stiff. Fold the egg whites into the almond mixture. Pour the mix into the cooked pastry case, sprinkle flaked almonds on the top and bake at 175°C for about 10 minutes

    This worked out great even though I forgot to reduce temp as I have a fan oven. Better when cold. I am impatient but it is worth waiting :D Only 6g carbs for 1/6th slice. Tis filling and tasty. Not for those on Atkins induction right now but ok for DrD's and maybe others.

    With this and Tinks mousse I have no reason to eat sugar and wheat laden cakes and desserts. Yipeee!

    Lady RM - This is something you could make to low carb the family without them noticing :D

    Thanks for letting me spout off, it's good to have somewhere to do that.

    mercy that sounds fantastic!!!,,, shame i am on induction still right now but a definite saver.... another cake type thing is the instant bread made with almond flour and sweetener (i use da vinci syrups for different flavours)

    another sweet is cheesecake, cream cheese, sweetner, cocoa powder or lemon or even s/free peanut butter (no nuts on induction but can have other stuff)

    mercy - if you ask tinks nicely she may post her chocolate sponge recipe - again its amazing me and hubby love it !!

    brekkie - 2 mouthfuls of overcooked scrambled egg - was in a hurry was yuk threw the rest away
    lunch - bacon lc sausage cracker and pate
    dinner - burger with cheese and salad
    snack - clementine
    on my first glass of red wine - may be the only one may have 2......
